Great question. In my honest opinion, I do believe for best results, you would have to modify the kettle lid. If you see any of my Weber cooks, I installed a thermometer at the grill level (or close to) through the lid opposite side of the exhaust vents. I drilled a hole in the lid to accommodate the thermometer. I do believe this would be the best case for the S1. If installing the Breezo fan as well, I would also drill a hole in the kettle bottom to attach the fan. Not sure what the PB600 looks like. If there isn't already a gauge in the lid, maybe I would put one there at grate level if possible. I'm assuming this is an older model without wifi or any of that?

Where would you mount this on the Pit Boss Pro Series PB600? My display has faded and only partial numbers are fully visible.
