I'll tell you what made me proud was when your son heard you say it was time to put the soaking meat bucket into the cooler around 19:00 and he went and automatically opened the door for you without another word needing to be said. Good manners and pays attention to dad? Must be good parenting and that's almost unheard of anymore. Makes me feel way better about our future. Good job all around, gentlemen (younger and older)!

I made this with two deer last season. It was awesome. I have two deer hanging from this season (2024) and just reviewing the video to get the steps right again to make the second round. Can't wait for it to be done. Thanks for the great video. Now, if you could just include aromas and tastes in your videos! Congrats Boston on your successful hunt. I hope you did well in 2024 too.
I would like to thank everyone who took time to produce this video. I have asked for this one a couple of times and they finally did it. Thank you so very much. I kept a round roast out of one venison hind just to try to make this. One question I have is after the smoke/cook process can I dry age it? The wife gave me some dry age steak wraps for dry aging meat in your fridge. I want to try it to dry age it before I slice it. Again thank you White feather meats and the Bearded Butchers for everything. Keep up the great content!
I don’t claim to be a pro at dry age but I don’t think dry aging after cooking would turn out well. It is intended for pre cooked raw meat. It will build a pellicle (hard rind) that is not very appetizing and would just add a massive loss to your end product. Not to mention any possible food safety issues that may arise after all the curing and smoking. I would research first before losing a large chunk of meat. I also would stick to large beef cuts for dry aging so you have more usable meat after the dry time. Good luck man.

Yup I made jalapeño cheddar summer sausage, jalapeño cheddar venison sticks and Cajun venison sticks this year with your seasonings. We got 4 deer this year.
Oh my gosh that looked so good! I've done something similar. When it was done, nobody knew it was venison. I myself thought it tasted and looked like roast beef.
It's like you read my mind. I just had a butcher place like yours near me do a ham for me. Then I bought a pellet smoker and was gonna try and do one on my own. Thanks for doing this, now I know much better how to do this!

Love watching these video to be able to make various meats at home with fresh simple ingredients as I can not consume store bought items due to the amount of ingredients that I cannot have due to cardiac medical condition for a heart healthy diet. I would love to know how to make polish sausage, dried beef or ring bologna!

This is my 2nd year processing my own venison, but I ALWAYS get conflicted about trimming....what is okay to leave what is not. I know the goal is to remove the tendons, silver skin and fat. But when I watch these guys and others, I see them leave a lot more on than I do. And now you show me this Beast of Meat and I know there is stuff inside that I would normally trim out but it's all intact?!?!?!?!?!? I guess I just need to work for a butcher for a season
I would love to see you guys challenge yourselves with different versions of deli meat. You could absolutely find a whole new element of viewers and when you feel comfortable selling it you can sell the seasoning. I dare you. Lol

Definitely interested in the white oak pellets I smoke all my dear over oak currently and it makes it taste like Beef! and I am a Cattle Rancher who raises his own beef! I will have to do a segment on this for my channel.
Just finished injecting and venison roasts in the brine bucket. If I keep it in the fridge at 36 degrees, could I use the brine again? How long could I keep it?

That stick is a honing rod or honing steel, not really a sharpener, it just puts a finer edge on your already sharpened blade. Hope this helps.
