Merry Christmas! I made the Hash-brown, sausage, egg cheesy casserole and it was yummy! I made it Christmas Eve evening, stored it in the fridge and baked it Christmas morning. I used the O’Brien potato hash browns but still chose to add more onion & red bell pepper. It came out really good, delicious. My husband loved it. And my 92 yo Pop did, too. Thank you, Mandy. You’re the best 👍🏼

Mandy I use Tator Tots. I put them in my baking dish and slip that in the oven to bake while I shower. Then I take them out of the oven and mash them onto the pan and up the sides a little then add all of my other ingredients and put it back in the oven until done.

My most memorable Christmas was several years back even though we all live within thirty minutes of each other, we decided to all spend the night at my oldest son’s new home. Christmas Eve we opened presents and ate finger foods. Christmas morning it’s our tradition to make sausage balls and sausage bread. We then cooked our big Christmas meal but for the life of me I can’t remember what that was. It’s usually chicken sausage gumbo or steaks on the grill. I cooked in the kitchen off and on and we played games. It was cold outside so we warmed by the fireplace. We had so much fun. I’ll never forget that Christmas! I’m happy we all had the time together bc in 2019 my husband and Dad to our three sons died with brain cancer.

It seems like everytime i put an order it for the Obrien potatoes, they are either out, or un out before my order gets filled and the want to sub with plain hashbrowns. So....I check at least the a week and when they have them in, I get someone to pick up 2 or 3 bags for the freezer. I Love Them.

I make my Hashbrown Casserole with Shredded Hashbrowns and lots of them, Sausage, Bacon, or Ham lots of Onions, Bell Peppers, Eggs with lots of Cheese! I love that Gooey melted Cheese! Always use Sharp Cheese! I layer the Hashbrowns, Pepoers and onions mixed, and then add Sausage. I make a sausage Gravy and pour over the Hashbrowns n everything! Then I add the Eggs and top with Cheese! I make Biscuits and fill with Homemade Jelly or Jam. Y'all, I'm telling you that this might not sound good with the Gravy on it but, it knocks it way over the top! Or you can serve the Gravy with your Biscuits on the side. Either way, this Breakfast is Simple and So Delicious! The messier and gooeyer, the Better! I always got to make Homemade Biscuits to go with our meals anyway! They're simple to make but Oh So Delicious! My Momma always made us a huge Breakfast on Christmas morning and I have for 60 years done it for my Children, Grandchildren, and Great Grandchildren n Babies! Thank you Mandy for your Recipe! Serve up Biscuits Toast or some kind of Bread with your Breakfast! Merry Christmas Y'all from N Georgia Mtns... God Bless. 🙏🙏❤❤🎄🎄🎁🎁🍭🍭

Hashbrown casserole. Growing up, we always had a big "Sunday breakfast" at my grandma's with of LOTS of biscuits and gravy with fried eggs, bacon, sausage links, and cubed up tomatoes (also with gravy on them). Like seriously, my grandma made at least 24 GOOD size biscuits by hand for 10 people and they were GONE off the stove before she even sat down.

@@MandyintheMaking Another thing I'll always remember is how she raised 9 kids with 6 being boys and most lived out of state and if her phone rang on Christmas Day, she would always answer by saying "Merry Christmas!" no matter who it was on the other end. And this was before Caller ID was ever a thing. It could've been a long lost cousin from Timbuktu calling to check in and she didn't care. It was the best.

Funny story about the making of the sausage/hashbrown casserole. It's lunch time Christmas Eve. Oldest son & his son are here from GA. I'm putting out the fixings for hoagies and also browning the sausage to make the casserole. That got cooked and I made my sammich and left the kitchen to eat. People and mostly guys were coming and going. I got back out to the kitchen, looked at the sausage and it looked different - not nearly as much as should have been there. I discovered that 2 of the grandsons (in their 20s) thought the sausage was part of lunch and had put it on their hoagies!!!! Oh my! I cooked up some bacon to supplement the sausage. I'm sure it will be good in the morning!!!

Mandy, they both look delicious! I make the hash brown casserole nearly every year. I do use the shredded hash browns, with some diced sweet onion and press those into a 9 x 13 casserole dish. I melt a stick of butter and drizzle it all over the top. Then I load it up, usually with ham, chopped fresh asparagus, mushrooms, grated cheese ( I combine sharp white cheddar with Swiss ) and some chopped red pepper. Beat 8 eggs with milk and salt and pepper, pour over the top. Because the butter is drizzled over the potatoes in the bottom of the dish, they get a nice brown crisp on them. Merry Christmas to you and yours!

Hi Mandy. About the Christmas lights in Tryon, NC, our sons and daughter-in-law went with me around the Christmas 2019 (when we lived in Shelby, NC). It was nice, just make sure you have enough gas. I wasn’t the one driving my car (and was sitting in the back), so by the time we realized it, we had to stay in line until we could get to a point to leave (which was before the lights). Then we ended up going back home (after getting gas) and went the next night. It’s neat how they have the music and lights working together though. 🎄
