  • ingredients:
    the peel from one pineapple
    1 anise star
    2 cloves
    1 cinnamon stick
    1 cup of piloncillo
    water
    brown sugar to taste

    This looks really fun to make. I have a very cool tip for you that I learned from reading comments on a video years ago. You can make a device to hold your solids below the surface of the liquid if you’re using a round jar by taking a large plastic lid like from a Cool Whip container and cutting the edge off all the way around so it’s just a flat piece of plastic then cut a slit from one edge to the center then you curve it like a cone push it down into the jar and let go and it’s spring loaded And opens up. It works great and it’s reusable. I use it when I make fermented hot sauce.

      You can start checking after 24 hrs if you live in a warm place. And you can taste it every day and stop when you like it, the longer the time the carbonated. Check my newest tepache video for more details

    Thanks for the quick and simple video. All the other tepache videos are like 5 minutes long and involve the person giving us background on how they first had tepache on vacation, the local weather, who they were with, how much everyone weighed, and what songs the tepache reminded them of LOL.. just show me how to make it bro hahaha
    Btw, what would happen if you throw in a few pineapple chunks in w/the the skins?

    Just made mine and covered the jar an hour ago and forgot the cinnamon and I have star anise and clove. So I'll be adding that

      @@NoWayJoseCuisine I tasted after 24 hours and was amazed by the flavor. I've made kombucha before and it's OK. I expected this to be similar but was pleasantly surprised. It's better than the pineapple itself. Thanks

    Hopefully i made it right i made 5 gallons 1 piloncillo n 2 pineapples skin n fruit might take longer to ferment i want it tart

      its normal but it doesnt happen all the time. recommended to scoop out the foam that is on top.

      for how long you ferment it? if its white mold or foam its fine to remove it, i once had mold on the mouth of the jar but not in the liquid so i cleaned it and saved it. sugar is an important ingredient in fermentation, that helps to prevent mold, humidity and weather is a factor as well.

      you can store it for even a year! as long as it's in a cold temperature so the fermentation stops, and well sealed. I know it last for long time but in my case as much as I make it never last too long cause I drink it quickly

      Its very lightly alcoholic. Mostly it's a fermented drink.

    Helloooooooooo I have a question. So I have some Leftover tepache that I made about 1-2 year ago😅 In the fridge. It turned really sour now😅😅 What to do with it? Or should I Just throw it away?

      If the room temperature is very warm it might happen. Gotta be in a cool and dark place for better results and I used to like mine more sparkly, now I just ferment for 24 or 48 hrs and I like it better

    if you want higher ABV% just add more sugar and bread yeast

      Once the yeast has absorbed all sugar once fermenting is complete no matter how much more sugar is added it won’t change alcohol by volume… Because fermenting is already completed…
