My husband is German, born in Heidelberg, and we love German Red Cabbage and I make it quite often, especially at Christmas. My son requests it every holiday, especially Christmas, no matter what meat we have. I make mine a little different than you do. I use butter and I just put all the ingredients (cabbage, onions, apple, butter, bay leaves, ground cloves, black pepper) in the pot at the same time. I also use white vinegar and sugar, equal parts. We like the tangy sweet flavor.

This recipe is almost similar to the dutch braised red cabbage (rodekool). However, in the Netherlands we use butter instead of "Gänseschmalz" (goose fat), we use cloves and bay leafs as well and we add cinnamon. In addition to the fine diced apple, I'd like to add apple cubes appr. 30 minutes before the end of the cooking time.
We eat it with boiled potatoes and "Hachee", which is a stew based on onions and beef, seasoned with bay leaves, cloves, salt, pepper and a little white vinnegar and/or red wine.

No apple or sugar in my red cabbage . My mother was from the part of Germany that doesn't eat sweet red cabbage or use apples in it. I'm so thankful for that I like the bite of the vinager, onion, ect.

For me braised cabbage is the smell of Christmas! It’s interesting how there are subtle variations depending on where in Germany you come from! My Dad was originally from East Prussia (not even part of Germany any more), so our family variation is the same as yours but the acid comes from Lemmon juice, and there aren’t any cloves but Marjoram is added. I didn’t see you put in pepper, but I’m sure you must. My wife and I have caused a slight rift in the family by adding garlic, we think it’s an improvement, my brother thinks garlic in braised cabbage is a heresy, my Mum changes her tune depending on which one of us she is talking to😂. Oh, I forgot, a good nub of butter goes in at the end.

Ahhh, I love this video. Thank you for posting it. I just bought everything I need to make this and i got a very large cabbage so we will have this tonight and for Christmas as well. I make mine the same way. I first tried this out of the jar from the Aldi store around Christmas one year and liked it and then I tried to make it on my own and wow what a difference. I will always make this homemade from now on. It is a great add on to a meal and contains fairly inexpensive ingredients which is perfect. I love it 🍽 👍 🇩🇪 ❤

Yours looks very similar and I bet it’s pretty close to their recipe. I really like the way you have prepared it and thanks for the printable recipe. I rarely see anyone using Real Salt from Utah. So many people use sea salt that has been refined from the ocean. If you know anything about the ocean the water is contaminated with microscopic particles of plastic. Thanks for the video.
