- Meringues are one of the easiest and
most transtormative foods you can make. A staple when
making desserts and an endless canvas to riff on. Egg
whites, sugar, and creamof tartar are all you need.

Orange Blossom & Dark Chocolate Meringue Cookies
ingredient:
4 egg whites
1/4 tsp cream of tartar
3/4 Cup sugar
*2 tsp orange blossom water
1 ounce of dark chocolate, melted
1 Ounce of dark chocolate, shaved
Preparation:
. Preheat the oven to 25OF/120C.
2. Crack your eggs into an egg separator and whites into a
small bowl. Transfer to a stand mixer or large mixing
bowl. Add in the cream of tartar and begin mixing with
whisk attachment or hand mixer on medium.
3. Once frothy, about 2 minutes, add the orange blossom
water and slowly start adding in the sugar and increase
speed to high. Continue mixing until stiff peaks form,
about 5 minutes.
.Using a spoon or ice cream scoop transfer roughly 1/4
cup amounts of meringue onto a parchment lined baking
sheet roughiy 1-2 apart.
5. Add roughly 1/2 tsp of melted chocolate onto each
meringue and carefully swirl in. Transfer to the oven and
bake for roughly 1 hour or until hardened.
5. Garnish with shaved bittersweet chocolate.

What is that cool egg separator thingy? Where is your affiliate link lol? I have some in the oven right now I used cocoa powder like fully mixed in and some chopped pecans just turned my oven down to 250. With the nuts and the egg whites we get away with calling these protein cookies in my house
What do I do if it’s not whipping
You have to add cream of tartar before you start whipping. If you don't have any you can substitute for lemon juice or white vinegar.
@@ilovemydog-cg3vy You don’t have to add an acid. It helps stabilizing, but if it’s not whipping at all, there is something very wrong to begging with. Acid won’t fix it.
My guess is that the eggs weren’t separated properly and some yolk mixed in.
@@ubvrox 👍🏼 I completely forgot about that, but yes you are right maybe they didn't separate the egg whites and yolk properly. In my experience, my first time making meringues I didn't add an acid and the egg whites weren't whipping up into anything. But yeah you're completely right
Instead you can use Aquafaba.
Were your egg whites room temperature? Old/expired eggs and cold eggs (cold as in straight from the fridge) don’t whisk well. Take eggs out of the fridge and set aside somewhere in the kitchen (but not on or near the stove) overnight to warm up to room temperature before whisking. Hope this helps 😊
