My Dad was stationed in Thailand with the Air Force in 1974, and my Mom and I joined him for several months. Unfortunately I was 3 or 4 at the time and don't remember it. Fantastic! Absolutely love your videos! Tried your Yum Woon Sen recipe a few weeks ago with some guests. Threw in some scallops too…speechless! Could you please tell me the Healthy Boy alternative of dark soy sauce that can be used with this recipe? Despite my undying loyalty to the HB brand, I find the labelling colours and formulas to be very confusing or very inconsistent and they vary from country to country in my experience.
Any dark soy sauce, particularly as used in Chinese cooking can be used. But they're more salty and less sweet than HB, so I'd reduce the quantity of the soy sauce slightly and increase the sugar to suit in the overall sauce. The one not to use would be "kecap manis" as while it has a dark-ish colour, there's a lot of sugar in there and might throw the balance of the dish. In a pinch, I've used Malaysian caramel dark soy which is almost "inky black", so only a tiny amount + smidge of water gave the noodles the requisite attractive hue without it being so black one cannot see the contrasting colour of the veg and protein.
Can you suggest to me how I should prepare for two hungry guys. Should I do one portion and let it sit soveside while I prepare the second portion or just do for two at the same time? Also why is nonstick cookware a must? This dish has been made long before they invented nonstick. I make chow how fun in a stainless wok with out issues. I value your opinion. Thanks
You can do 2 at the same time, if you have enough space. I suggest a seasoned wok or nonstick pan to prevent the noodles from sticking and breaking during cooking. However, it can surely be made in any type of pan. Thank you

What kind of noodles are you using? The brand of noodles can affect the texture. Are you using a nonstick pan? Add the sauce in little by little.
