    Hey chef oxtails is something we eat quite often in Jamaica and oh yes it's tastee but no sir we don't cook it like that anymore because it's time consuming. Here's what we do, 'brown' the pieces in a hot pan/dutchie and then transfer to a pressure cooker for about 30-40 mins depending on your cooker and stove an hour max or you can just pressure without 'browning' for the same amount of time and then viola no harm no foul and the result is a tastee meal, yum😊. And as always enjoy😊😊.

      WHOA...!! My Grenadian grandmother cooked it that way for us in Trinidad...On a coal pot stove! She used a pressure cooker the way we use a microwave. Oxtail for two is affordable...if there are more people it becomes expensive. Funny how all the cheap cuts now command premium prices!!

      They come out fantastic if you use sous vide, but it takes a _long_ time. Four days at 185F and it's the best oxtail you've ever eaten. The bag juice is liquid gold for making sauces, too.

    thank you so much for this demonstration. my grandparents favorite meal used to be ox tail soup. I always wanted to try to make it but never knew how. now I do. looks amazing and delicious. thank you chef john. I really enjoy your videos and look forward to the new one each week.

    I just cooked Oxtail for the first time this past weekend. Sous Vide is the way to go! first browned them, also did a pan sauce with onions, carrot, celery, garlic, worcestershire sauce, rosemary, bay leaf, beef broth, S&P and MSG and cab sav wine. Reduced and added it to the browned oxtail in a vacuum packed bag and into souz vide for 28 hours at 185 degrees. Flavor is fantastic and beyond tender. Its like the best pot roast ever. Its so good!

    Chef John, i love you and your channel even if you make a mistake every once in a blue moon. It's ok. You're the only chef i've seen who sounds so cheerful when cooking, and treats their food so very tenderly, like they're your babies (minus the part where you eat them at the end lol).     I'm Vietnamese and this recipe reminded me of my childhood where we would eat pho with oxtails and my favorite part was actually sucking all of the flavor off the bone haha! Thanks for this recipe! I can't wait to try it! And I think it's great that you're experimenting and trying new things. Even if you fail 100 times, it'll be so worth it when you finally hit the jackpot and come up with an amazing new recipe😊 So you just keep doin you👌

    Have fond memories of my German grandmother's oxtail soup and wondered how long it would be before Chef John poured them into a stockpot? My second thought was to use an electric pressure cooker to brown, then add the liquid and let the pressure tenderize the meat. I even make pasta with my pressure cooker now & it turns out great. My dad was born in Sicily so we had authentic pasta twice a week growing up and my mom's folks were from Germany so I got the best of both culinary worlds. Chef John is amazing because he isn't afraid to show his mistakes and we all learn. Everyone of his recipes that I've made have been fabulous.

    Thank you Chef John. I did some ox tails a couple of years ago. But i did it with carrots, celery and onions. browned my ox tails and vegies and then topped of with a generous amount of redwine. i had a tactical glas left for diner :D It was heavenly.

    Thank you Chef John for this video. Ox tail is one of my favorite foods, and so few places serve it. And fewer serve it well with that completely falling of the bone preparation. Or they try to tart it up instead of just letting the rich flavor of the ox tail be the star.
    You've given me the confidence to try this out, and for that I'm grateful.

    One of my favorite things my mom used to make was oxtail stew. Until they got so expensive. Then they became a rare treat. So sticky good.

    I braise my oxtails in a Dutch oven. Gets fork tender in 3.5 hours, maybe it's because I have more liquid I guess, kinda like slowly boiling them.
    Instead of wine or Guinness, try it with some sasparilla or root beer ... Pretty good. Just be careful that it does not get too sweet.
    I have always enjoyed Food Wishes vids. It's so good to watch!

    I love oxtails for the reasons described. Indeed I like them so much, that I only cook them on soups with very few other ingredients. Just water, herbs and a potato or two. The stock is just superb and with a thick slice of toasted chiabata or sourdough... mmmm... ... ...

    Thanks for another great video. I used a wide dutch oven. After adding the liquid ingredients, I put it's tight-fitting cover in place and returned it to a 325* oven for 2 hours, per your original idea. At that point, the meat was tender, but not quite falling off the bone. After turning the meat, I let it go for another hour at 275* and it came out perfectly. I suspect that your meat "stalled" because the evaporating liquid was actually cooling the meat, but your initial instinct was right on. A tight-fitting cover would have made all the difference.

    I would say the reason why the Oxtails didn't braise well in the oven was due to not having heated up the liquid sauces (Tomato, Stock, Water) you added. I think you should have heated up the entire pan on the stove to just boiling temp, at which point you then cover and put it all in the oven. I remember hearing Gordon Ramsay explain that once in which if i remember right he said if that liquid is not up to simmering temp it'll take a long time to in the oven. I like that you recovered and got it all done and turned out well on the stove.

    made this over two days...about 8 hours active simmering time. Best ragu I have ever made. Chef John is correct. Oxtails rule! Use blogspot recipe, sherry added, crucial ingredient. Browning with onions in oven also crucial. Add a little chicken stock if onions start to burn....

    I've done something similar and I used a crock pot for the same reasons you used a cooking pot. Oxtails make amazing ragus. I never thought of using white wine vinegar, though. Good tip!

    I almost never post comments on anything online, but I absolutely must comment on this particular video:
    I cook all the time, I love to cook and usually develop my own recipes, by which I mean I buy whatever meat and produce is relatively cheap and make it taste good without looking at recipes or accepting input, then email my family some approximation of how I made it. I had never tried to make oxtail until today, and I was inspired to do so today by this video, me having today and tomorrow off (and nothing better to do than braise meat for 7 hours) and a snowstorm that turned out to be all bark and no bite.
    I did not really follow the recipe that specifically, and I think if you are handy in the kitchen and have even a shred of creativity you shouldn't either. No offense to the recipe, I simply mean this is a recipe you can really play with and turn into your own.
    Having never cooked oxtail before I'm happy I watched this to get a feeling for the techniques, browning it in the oven on a bed of onions, for example, is a method I would not have thought of myself. Good to know that braising it IN the oven is useful if, and only if, you wish to read Moby Dick while your meat is getting tender. I followed the basic idea of making this with Italian style, but definitely changed the seasoning profile to make it my own, and could not be happier with the end result. This is truly a cooking channel to draw inspiration from, I love watching the methods, hearing the cheese-tacular jokes and puns, and will continue watching for more inspiration. Maybe one day I will start filming my own kitchen adventures, but until that day, Thank You Chef!

    Oxtail really is one of the most flavorful cuts of meat on the cow. I am Dominican and my mom makes oxtail beef stew with rice and puts it in sancocho, a traditional Latin American soup/stew that has all sorts of root vegetables, meat, and corn in it. So delicious! You should try sancocho if you've never had it, Chef John. I think you'll really enjoy it. I eat mine with some lime, a little hot sauce, and a scoop of rice. :)
    Thank you for sharing this recipe! I'm inclined to try it out.

    I made this today! Except I had turnips and didn’t feel like going to the store for noodles so I made mashed turnips as a side. I crock potted the mixture of oxtail and onions with the sauce for 8hrs on low - fall apart tender! Everyone agreed we would like oxtail more in barbecue sauce, but this was fun! Thanks!

    hi John, i use your site whenever i need an idea to cook something , your to the point, and the recipes ,work quite well,
    now i find oxtail quite fatty, so i tend to boil mine down for an hour or so, i find it stills renders the flavor at considerably less the fat .. cook on !!

    Julia Child forgot ingredients, burned food, dropped food on the floor, over-cooked under-cooked, used wrong spices, etc. And she showed and spoke of many of these mistakes. If anyone (MrCurry) thinks Julia Child didn't know how to cook because of that then you honestly have no business in the kitchen, watching any cooking videos, and certainly shouldn't have the arrogance to comment.

    I made something similar the other day. Instead of oxtails we found organic goat necks, made a ragu style sauce and made a lasagna out of it. Stunning !

    Love this recipe. As a child mom would make these at least twice a month. Oxtails are wonderful, the problem is now they cost so much. I may go over my food budget this month and go for it lol.
