    People need to watch this video if they’re skeptical of crawfish pie. It’s so good! You’ll love it! Crawfish is pretty much baby lobsters! Great Video as always Russ!

      I bought a little empanada style crawfish pie once at the Zoo in New Orleans and it had rice in it and was so good. I've made them like that every since. Helps fill you up faster too lol! Thanks Sapo, I appreciate you checking the video out brother!

    Russ you have outdone yourself with this one....hubby and I are always impressed with your recipes, but this one is amazing. We just finished dinner with these fried and a side of red beans and rice. Absolutely delicious.

    Rus, your roux was perfect; thick rich and caramel colored, just as you were aiming for! I'll definitely look for genuine Louisiana crawfish. I made a low-carb étouffée once with shrimp that looked very much like your filling. I feel I now that I must have been on the right track! I love this recipe! Yup, I think I could eat the entire pie myself, and I'm neither Cajun, nor full grown! LOL! Thanks for the great recipe my friend!

    This is so interesting, in Sweden we generally cook crawfish by boiling them in salted water with dill in it (fresh dill, and preferably the flowers of the dill, which is called the dill's crown), and eat them cold just as they are.
    You have such a pleasant voice and you show everything you're doing really well :) this looks really tasty, I've never had Cajun food before so it's exciting to learn how to make it!

      It's pretty common for other countries and regions to prepare the same meat in a totally different way with different spices, herbs, etc. I would say that "Cajun" cuisine to me is the best tasting on the planet, but then again, I haven't had a lot of food from other parts of the world to compare to, but would love to try some.       Hi Paivi! Crawfish pie has been around for a very long long time. There was even a song that Hank Williams Sr. sang about it. I don't imagine you will find it anywhere but in this region, and mainly Louisiana, even though we do have them in our grocery stores here in Mississippi, but we are right next door to Louisisana

      Thanks! I hate your allergic to shell fish. All my videos tend to run a little long, but I do try to snip out any unnecessary footage to keep it as to the point as I can as to not bore people. Some people are in a big hurry and if it runs over 3 or 4 minutes they move on. I personally can watch cooking videos for hours on in.

    After boiling my Crawfish I take some heads and boil them done the next day after the boil for the stock. Buy the way put the boiled heads in the Refrigerator If you have to do it the next day.

      They started the build on Monday of last week and it's probably ready to go, but Chris is out of town from the 13th to the 16th which is tomorrow, so if he tells me it's ready, then I'm driving to Texas this Saturday to pick it up, but if not this weekend, I'm positive the next.     I have never heard of a crawfish pie! Sure looks like a certain cure for the hunger from a 3 hour surf in 52F ocean (usually I just take 10 minutes to chow down a 2.5 pound al pastor super burrito and a Negra Modelo beer). I wonder how that would be with some corn and diced andouille? For that matter, what about adding shredded pepper-jack or even sharp cheddar before dropping the lid on the pie? I guess at some point too much of a good thing(s) can just be overload.

    Here in the kawartha lakes region of Ontario,we are pretty much surrounded by water,all of which contain crawfish,however due to invasive species we are not allowed to transport them over land! My question Rus ,is, could I substitute shrimp for the crawfish in this great recipe? Also checked out Allas channel as well,WOW! With a last name like mine , how could I not sub?!!

    Damn Rus you are the man! Is there anything you can't do? Those look fabulous, both the big pie and the small pies. I was waiting for you to egg wash the top crust of the pie though. You don't egg wash it?

      Thanks Angie! You can put a egg wash on the pie if you want that shiny look and the awesome color it gives it, but it's not typically done on a crawfish pie. This is more of a rustic savory pie and what you would get anywhere that serves them. I just used the egg wash to glue the top on, but I have used a egg wash on buns, breads, and even other type pies, just not these ;)

      I've never eaten Pigeon, but I hear in certain parts of the country they consider it a delicacy, but I have eaten plenty of dove. I love making a gumbo just like you would do for a seafood gumbo, and instead of adding seafood, and in dove breast and your favorite smoked sausage. Good stuff.

    spanish has more flavouur than american

      I wouldn't say more flavor, I would say totally different flavor. Have you ever tasted New Orleans or Cajun style food? Tons of flavor and different from any other part of the country. The flavors was brought to America many years ago from immigrants from other countries and is with no doubt my favorite cuisine in the world, and I have had plenty of other cuisines and Spanish is also a favorite of mine.

      +Blacques Jacques Les Squacques +Smoky Ribs , I always watch to see what suprises appear in some cooks " authentic " Cajun food that exposes it as anything but authentic and I have caught many . You never fail the test .

      LOL, I've been eating Cajun food all my life. I only live 45 minutes from the Louisiana state line and that fine cooking filtered it's way across the state line many many years ago ;)

    Spain 's seafood is considered one of the world's best becouse of its flavour...but hey! Stay away from these.
