You can change the sensor without separating the hub from the backing plate. But its actually easier to just buy a new hub which comes with the sensor installed in it.
I think he just wanted to show how to remove the sensor and reinstall a new one if you wanted to. However, it is a better repair just to replace the entire hub assembly with a new sensor already installed as he did here.

Why do this? Just replace e the entire bearing with all those miles. $75 All your doing is probably ruining that sensor

If you are installing a new bearing why remove the sensor and put it back in?
