❤ My 14X paternal great-grandfather was amongst the first waves of settlers in Quebec. He was intimately close to the first peoples of the land (as were his explorer sons), and was taught the joys of preserving wild meats from the local Mohicans, and later the Algonquins of Abitibi, Quebec.
One of our family's recipes is pemmican made of braised then dried beaver in blueberry and wild grape wine. A couple chunks of that in your pot would make any bland carbohydrate taste wonderful. It was like our version of chili crisp sauce😅😊
Over the following generations, we had developed dozens of variations on the typical pemmican recipe (so the story goes) with all forms of wild game meats and foraged berries and herbs. We even had what could be considered as Thanksgiving Pemmican, with turkey braised in cranberry wine.
With the advent of meat farming making subsistence farming less and less necessary, so too did the need to make pemmican and the wild meats to make it with.
My dad told me stories of how his mom would make a special batch of pemmican for my grandfather (her husband) for Thanksgiving, which we celebrate in October. As the story goes, grandpa would regale the kids with family stories of adventures, romances and wars while everyone ate a little bit of pemmican-laced mashed potatoes.
Oh what we lost in the last century or 2 is unfathomable😢

If you read any of the old Bradford Angier 's Survival books ( published in the1950's). Beaver is his Chosen survival food. He especially likes Beaver tail. HE said it was almost all fat and could be thrown directly on hot coals to cook. He said that it was the most nutrient and calorie rich food that required the least preparation. His books, most notably " How To Stay Alive In The Woods" has provided me company by candle light on many a lonely canoe/ mountain/ sea island camping night. A tattered copy stays in my big pack.

All jokes aside, beaver was one of those things I made more off of selling the carcass than i did the hides when I trapped as a kid-young adult. Since it was also almost always damage control trapping, a beaver eating trees off a lake where a house was built or plugging colverts or pond overflows... there was that income as well. Most years they paid the gas and other costs of trapping other furbearers in the same area. Raccoon carcasses is the other thing I sold lots of. Almost exclusively to Blacks in the city for "soul food". We had to leave a foot on the carcass of those so they could be sure we weren't selling them the carcasses of skinned house cats (young raccoons skinned look close enough to those it had been done at some point apparently).

Guess I'm gonna leave a paw on and head to the east side of my nearest city with my roadkill. I'm gonna charge a premium as 'wild' or 'pastured because my raccoons aren't just jumbo dumpster rats... mine are from the countryside.....roads. Bon apetit.

This is great! Back in the early 2000's had a fam of tree chewers infest a marshy corner of the property. We had a guy come and trap 'em out. Got 5 and the big one was 54 pounds. Being a hunter/fisher I asked if he ever tried eaten it and he said "all the time, I'll bring you some hind quarters" Popped a pair into one of those oven bags with some onion soup mix and cooked it just like a beef rump roast. Unbelievably good!
Thanks for spilling the beans Joe! Now the whole world knows... 😉

In fact, eating too lean proteins over time leads to what they called rabbit starvation. It would seem, though, they they might have used the tail in the roast dish, combining kean and fat, much as we might add pork back for a savory depth.

I ate my first beaver when I was fourteen. I'd say it is an aquired taste. But after a while, I just couldn't get enough of it.
Eating too much beaver cost me my first marriage. My wife insisted I eat beaver only in our house. But there is so much beaver out there that I would eat beaver on my lunch break at work with a co-worker. I'd eat beaver with my wife's best friend. I even ate beaver with my two sister-in-laws, AT THE SAME TIME!
What can I say? I just love beaver.

Reminds me alot of ox-tail. The meat itself is tough and full of bone, but it also has a high fat content. When cooked over a long period, the fat melts down and cooks the surrounding meat to perfection. It tastes better the best steak imo and is packed with calories. You just need to know how to cook it right.

I ate my first beaver as a freshman in high school. I don't think it was cooked properly because it was still pretty bloody.
