at 18:40 why didn't he just use the live center instead?
Wondering the same thing. He's even holding it in his hand right there, not like he forgot about it. Laziness or just trying to show how you would use a dead center I guess.
If I had to guess, the live center has ball bearings in it, so it has some degree of play. If you are looking for that last little bit of precision the dead center may have an advantage. However, I did question in one of the live center demos, he had the quill(?) of the tail stock extended out pretty far. I would think you would want that as short as possible. Any length there is similar to adding length to the part, and having a long part was way we wanted the live center in the first place.
Do you use lubericat when turning these parts?

There are definitely some interesting ideas here, if a bit risky, but I wouldn't call these essential machining skills.

When turning between centers, why did he choose to use a dead center in the tailstock, rather than a live center? Is it an accuracy consideration, i.e. are dead centers more precise than live?
Yes, with a live center, there is the slop in the bearing.
