Congrats on the 100k subscribers! That's fantastic. Just a couple of tips on your summer sausage. If you soak the skins in warm water before stuffing, it seems to make it easier. Also, if you use hi-temp cheese, the cheese will remain in small cubes during cooking. Great video. Stay safe and hope you have continued good luck throughout the season. Cubby

Another nice thing to do with a backstrap is to smoke a pastrami. You do a dry rub on it for about a week, then smoke slowly, and wow does that come out great for sandwiches.

Man. I miss all the deer sausage we used to make when I lived and hunted in the South. I'm an old man now and living in a state with very limited hunting.
Back straps makes the best whole meat jerky! Slice it thin, put your cure in, add a little water with your seasoning pack, and let it sit in the fridge for at least 12 hrs . Smoke it or dehydraye it. I love the hunters blend from dunhams sports ,and I add Cheyenne pepper for some bite.

My buddy just turned back strap into chili. It's your deer you do what you want with the meat. People are always going to say it's sacrilegious to do that but in the end it's your deer and your meat.
Congratulations on 100K. Although I didn't start watching your channel until 2 or 3 years ago, I absolutely love it. Being from rural part of central Kentucky I grew up hunting, fishing and trapping around Green River area. Now I'm just a few miles away still in Kentucky, but I do hunt public land and have learned to deal with the public land issues. I'm also thinking that we must shop at the same place, smoker and thermometer, Lol. I also have that same grinder, got it last year on sale and it works much better than the attachment on the stand mixer. This grinder is noisy, but it chews the meat right up and spits it out! Soaking the casings in water for an hour or so makes them easier to load. I really like my backstraps cut into steaks or pan sear/oven roast it and then slice. But once I did make jerky out of one backstrap and it was the best! Try it, you'll like it. I also found a sausage stuffer on e-bay for a decent price that makes the job a little quicker. Keep these videos rolling they are real and they're all great! I'm always looking for videos that I relate to and you always have great content.
I made it to the point of opening the meat grinder. My coffee is finished and it’s time to go hit the woods. Hope to get an archery season deer this year, for my first time ever!
Nothing beats pure land to table. Ive never been hunting. Hopefully this season I will finally get out & harvest my first ever deer. I live in TN also trying to find good public land has been stressful lol.
Gonna tell you the same thing I tell everyone on summer sausage videos……you gotta hang dry those for a couple weeks or just in the fridge uncovered…..dry them out and concentrate the flavor…especially the smoke flavor….beat ever thing to improve simmer sausage…this happens after you’ve completed the whole process
I have the exact same grinder but mine is labelled as a Weston, also purchased at Walmart. I keep an eye out for pork loin when they are on sale and buy a couple and freeze them for adding to my venison. I find cutting the meat in long strips helps it feed better without plunging as much.
Congrats on 100k When i make my summer sausage i will take the casing off an slice it all. Then vacuum seal in packs of the 10 or 12 pieces. That way when ya get it out throw it in your cooler where ever ya go its already sliceded an ready to eat. Thaws out quicker to. Handy when your fishing or hunting. Processing your own meat is fun thing to do , an ya always know your getting your deer meat back

Congratulations on the subscribers. Don’t know if you know but chickens love the scrap deer meat. The protein is good for them. I freeze my scraps in sandwich bags& feed them daily.

Just a tip put your seasonings snd cure in before you grind and mix it all up. Then when you grind it really gets the seasoning and cure mixed thoroughly and even as you can get.

As far as back strap jerky, we usually use top/bottom round but as the freezers stack higher, some back strap gets done. Its all good, you do the work, you enjoy the rewards...
backstrap jerky is 👍👍👍. you should try cutting some with the grain as well. since your backstrap is already so tender, going with the grain gives it some chew, but also still tender. if you add something like bacon to your sausage, don't forget to account for all the salt that's already in bacon. great video man!

I'm all about using backstraps for making jerky. It makes the best, most consistent jerky. I also use 100% backstrap, ground with 25% beef fat to make premium venison burger. You can't beat the burger it makes!
My buddy used to make Jerkie out of the back strap before he died. Miss him and his back strap Jerkie it was the best I have ever had. So you are not wasting it

Hey, soak them casing for about an hour before stuffing, it will keep them from expanding after smoking and ice bath. Enjoy your content 👍

Straps all I use for Jerky, it's awesome and cuts perfect through jerky slicer. I've got four in freezer now waiting to kill another then Jerry time.😊

Using backstrap for jerky is a great idea. Done it before and it isn’t wasteful like it feels lol
If it is too salty, you can eat it with an apple. Salty/sweat combination tames it down some. Thanks for sharing the info.

Bacon ends and pieces (bulk trimmings) are the best for adding to sausage.

I like to chop dice green onion, cilantro, onion, bell pepper, asian dry pepper, and all salt, pepper, n garlic season. Taste so good
