Before they fill the hold they put wooden boards covering the conveyer in the groove. Then when they unload they just start removing the boards one at a time so the conveyor doesn't get bogged down. If too much material falls on at once it will break something on the conveyor.

Looking at this again, it would make sense for the the guy wrangling the stone, to have a movable grating panel to move along, so that if he slips and/or he loses his balance, ,he won't land into the belt of moving stone.
Why in the heck are you loading trucks with the stone, why don't you do like USA does place in on another stretch conveyor belt to place on dock make monster pile of stone lot (faster)
Wild guess: The boards are not "swimming" in the rocks, they cover the ground, so the stones are not lying on the belt, that's running free under the boards. Every some time he removes one board, so more rocks can slip downhill. Without the boards, a bazillion tons of rocks would just block the belt from moving at all.
Why would I watch 30 minutes of stone unloading if I don't have to do it myself? That's why we westerns have the luxury of machines in our own harbors and the luxury of money to pay people in other harbors. (sounds harsh, but still the reality)
