Do you have to add vinegar in every batch of shanghai? I usually use my deep fryer like 50-60, but in batches. Should I add vinegar each time and if I do, will it not dilute the oil or make it vinegary?

@blueangelsfam9281 yung purpose kasi ng pagluto ng meat ahead is mabilis lutuin at di nangingitim yung oil kung marami ang lulutuin like 100pcs so kung busy masyado at lalo na pag maraming lulutin di maiiwasang mag palit ng mantika or strain ulit dahil nga po sa pangingitom nito so sometimes its really troublesome pa. Pero kung kaunti lg nmn lulutuin nyo po ok nmn po yun or di kayo nagmamadali. :) Yung vinegar nmn po yun ang nagpa crispy it doesnt matter if luto or hindi yuong ating shanghai or pwde rin ito sa vegetable lumpia .. Yung pinapa crisp kasi ng vinegar ay ang ating Wrapper mismo :)

Sis, thanks for sharing your knowledge dahil marami tayong pinays/pinoys na nagluluto ng lumpia kada special occasion o di kaya sa ordinaryong araw. It's always a concern how to keep the lumpia crispy. I thought of one method: putting the cooked lumpia inside the oven at 170 degree F. It kept the lumpia warm while still frying other batches. However, it did nothing to prolong the crispiness. Have a great Christmas holiday!
Matagal na akong nagluluto ng lumpia pero d ko alam yan ganyan trade secret mo which is adding a vinegar directly while frying. Kc ako nag add ng vinegar sa ibang niluluto ko pra d nga mapanis. Anyway thanks for sharing.

@jyby8739 yes po madali lutuin pag luto na ang meat at di agad nangingitim yung mantika at nasusunog yung excess na water from meat and tipid din sa mantika. Kaya mas ok yun pag nagamamadali kayo lalayo na pag big event :)

Iba po yung lechon kawali dahil skin ng baboy ang napriprito at iba naman sa wrapper lang.
