Fished with a guide two weeks ago that showed me this method. I am 64 years old and have been cleaning fish for decades going back to using a scaler, pliers, gutting and then having bony fish to cook. Learned to filet, then discovered the electric knife and now this revelation! Can't wait to get some more wallies in the livewell so I can give this a go.

Just before I hit this video I watched a video on how to fillet a walleye, They zippered the second one but not a very close shot. The other two had no rib bones removed. I commented that during a filleting demo you need to remove the rib bones too. Then I copied the link here and went back and posted it on the top line, than cam back for a final refresher!
I still think this is a hassle.. i used to work in a fish shop for 2 years.. id just cut right through the ribbones.. and then cut those bones off the filet after... its much faster this way... and for the pinbones i jused to make 1 single cut to get those out (with skin on).. i used to do like 400 files/hour...
Being in southern New England, I’ve never had occasion to catch walleye. Could this same zippering of the pin bones be effective with trout? I know how mushy trout can be and my first thought is no. Spring isn’t far off and there are a few days I can run to the pond for a bit but far and few in between. I’ll give it a shot when the opportunity arises. Great video. Thx Steve, Plymouth, MA
Don't forget to bleed them first , for some nice white meat. I usually do it before I head in. Great fileting technique, one I haven't mastered as of yet.

I've never understood people intentionally removing the whole filet before removing the skin. Skip the poke through step (or do it but don't cut through the skin at the end of the tail), finish what you're doing around the ribs, then turn toward the tail and cut back until you have the meat free and skin still attached to the fish. Flip the filet back and use the fish to hold the skin in place as you take the meat right out. Of course, some times the skin will separate from the fish anyway, leaving you to do exactly what you're doing here. But that is the exception and not the rule. And, usually, you'll be kicking yourself for some mistake you made to put it in that position anyway.
I just cut around the pin bone. That way I skip that step entirely . Filet up to the top of the ribcage where the color starts to change. Flip the blade around and go in opposite side cut was made. Then finish fileting down to the belly Viola' no pin bone
Is it just me or should you point the knife into the fish when removing eye meat? I say this because I saw a decent amount of meat was left in the edges when you remove the cheek.
You missed something have you ever heard of cut in the walleye wings I don't want to them the two front fins under the gills if you split between them and cut a chunk of meat off that's attached to the fan trim the fin and they're called walleye wings
We break the walleyes neck or cut its throat in order to bleed the fish, it makes the fillets much whiter and nicer in appearance . Once you try it you will not go back to your old habits.
I have been cleaning walleyes for years! I use an electric knife and can clean a walleye in less than a minute each! When you have lots to clean you will learn a better way to do it!
another great video but I never cut threw the but .I run the knife through from the addoffice fin (don't know how to spell it)its the fin behind the dorsal fin, then flip the fish and cut toward and around the butt. leaving the inner track with the gut and not the fillet.
Cool, gave me an idea to fillet a Walleye and fry up the liver. It's a sweet tasting kinda of liver. Not like beef where it's bland. Cool technique again with the zipper Walleye. Thanks for posting! 🤘🎣
Zipper is the only way. Least amount of waste, never a bone leftover. I would just suggest you bleed your fish before bringing it off the water. That is some gorgeous translucent meat on that walleye and at 1:58, all I can see is blood. I bled my first fish 10 years ago, never went back.

I've been a professional chef for 25 years, and I've never seen this before. This blows my mind.

Does the zipper method only work for freshly caught walleyes, or does it still work after it's frozen?
the meat will be a bit softer, and might tear a bit, but should still work....
We have always left the pin bones in and they cook out and aren’t noticeable very interesting seeing this method tho!

Being able to just cook out the pin bones is one of the great things that makes walleye such a great fish to catch and eat.

Yeah the two front fins are attached to a nice chunk of meat you can cut off but you leave the meat attached to the fins like wings

I have the same knife.. Only when I learned to use a whetstone did I get it that sharp..1000 grit followed by 6000.. It's like a razor..

Different vernacular in the states...we call an electric fillet knife a zipper

One thing I like to do is leave the meat on the skin the run the knife along the lateral or pin bones then skin them as he did.

the part i hate about this, is it ruins the best part of the fish, the tail. I want that tail in on piece so I cut out the pin bones after the tail

Keep the fish near the edge of the table so that your knuckles are out in mid air. Why drag your knuckles on the table ? It's not rocket surgery.

Just continue the cut on both side of lateral line and done no need to pull.
The point of Zippering is to save the time you would spend cutting and to save meat you may loose with sloppy knife work.

Impossible to filet Walleye and not get bones...I stand by my convictions!
Tell the truth, how many fish did you butcher before you mastered this? I know I butchered a few bass before I could save all the meat.
If you do butcher a fish learning to filet cut it into smaller pieces and make walleye cakes. Walleye cakes are better the crab cakesl
