I've been doing this for a few years now, garden veggies also. I'm even collecting Rose hips, which is new to me, but I plan on dipping my foot into the water and see if I have any luck. TY for such a great channel, it's more sensible, not to mention cost- saving, to save seeds, root plants and swap out seeds with friends, instead of spending money on costly plants and seeds each year.
If you’re just going to sprinkle them around, it’s probably fine not to separate. But if you are starting seeds in containers you may be wise to seperate, just so you can be sure and be precise

I’m in zone 6b/7a. :) it’s probably a little too cold for you to put fall seeds out now but you should be good to go in spring.

Do you HAVE to separate? Can you keep the seeds and chaff together and plant like that? Or will this cause issues
