You did it right in my book, first you don't know anything is going on then when you are told by and employee then you have to use more time to analyze the problem. I'm in your corner.
It would probably be hard to catch something so small and I wouldnt even think anything of it. I worked at a place and my Manager was on salary so she was always 30 mins to an hour late, take a 2 hour lunch, and leave early. It blew my mind that the Management company never said anything to her.
I’m spoiled. I don’t see being late 5-10min an issue. Where I work, a Fortune 500 Company, we do our own time card. Also, I’m an exempt employee, if I’m 20-30mon late, I just work 20-30min later.

My employer pays based on your scheduled hours and docks you if you arrive/leave 8-15 minutes late or early. If you have to work extra to get something done, that's on your time.

It’s too bad she didn’t just come clean about it. She had a chance to say sorry it won’t happen again when you first confronted her but she unfortunately made the choice to continue what she was doing and then lie about it again. She had a chance to get back on track.
That 90 minutes is nothing in comparison to what that type of person takes from you in time, even while they are in the store on the clock. that’s why I don’t have employees
A trusting person trusts, a business person is succesful by trusting those who earn it not by just being there, employee or trade partner..my dad failed from too much trust...and too little business acumen.
When are you going to write a book or teach a college class on "How not to run a business? " I ended up teaching a community college class after I learned that from being partners with my loser brother and then again with my father in law and then with a "friend". LOL

I would have probably given a warning; Let everyone know that this practice is against the law and that you would be keeping tabs on it. In the grand scheme of things this is far far from the worst thing an employee can do. I, however, work in an area where employees have been caught trying to steal multiple millions.
I would have probably given a warning too until she started lying to me, that would let me know the kind of person I'm dealing with. Probably dodged a bullet there.
Seems like your employee just thought you were an absentee owner. It took her some time but she figured out what she could get away with. It seems like you were not there enough days or hours to keep tabs on everything. Your managers seem like they were not keeping things in check. Being a hands on owner, almost micromanager style works best in retail.
And that ladies and gentleman is how you fail at business. You took your eye off the business you owned and relied on people that were not financially invested...smh

You always have to consider internal controls, hopefully you learned a valuable lesson.
While I don't disagree with letting her go, did you give her the opportunity to fix it and give her time to show progress?
