Eggplant tastes better than meat. Surprised my guests!
Watch this video to the end to learn how to make a delicious eggplant dinner.
Peel 2 eggplants, do not cut all the way through.
Cut each eggplant in two.
Blanch the eggplants in hot salted water after cooking them for 1 minute.
Allow to cool at room temperature.
Mix 3 eggs, Greek yogurt or 1 tablespoon mayonnaise,
Salt, black pepper to taste.
Mix together the breadcrumbs, flour and ground smoked paprika.
Bread the eggplant.
Dip into egg mixture.
Fry in heated vegetable oil on 2 sides over medium heat.
At the end of cooking, close the lid for 5 minutes.
Place the eggplants on a paper towel.
Bon appetit!

In the Philippines we Roast or grill it then flatten it. We then coat it with egg or egg with a little flour and sometimes with little ground pork or beef. Then we fry it. It’s a very common dish. We also slice like you did leaving the top intact although this one is less common. But your recipe looks good too.

you just could cut slices and would be more crunchy because in the middle that thing is like no fried the mixture in the middle but still thereand as well doesnt look very nice...well, jut my oppinion

My Mom used to cut them in slices and toss them in egg the wheat flour and then fry them. That was the only way I could eat them. She could stew them also. Now in these days I make them in Parmigiana and it's Delicious.
