  • This summer, let's do something fun and different with table centerpieces especially one all your guests can eat! Perfect for baby showers, wedding showers, weddings, basically anything as a table centerpiece or a large display. Today, we're trying out the beautiful Pinterest worthy Watermelon Cake Tower. It's so beautiful and will definitely grab the attention of your guests, plus it's vegan so all your vegan friends will appreciate it along with everyone else. So easy, starts with fresh watermelon cut into tiered layers and then with the magic of toothpicks you can design the front with any fruit and berries you want. It's easy, it's fun to make and it's going to be beautiful. You won't regret it, a fresh watermelon cake with fresh berries - you won't believe you made it!

    Steps:
    1. Select a large oval seedless watermelon.
    2. Select size of layers, keep them at least 1 inch in diameter difference.
    3. Cut rind off, don't cut too much pink off.
    4. Measure height of each layer, then cut watermelon into 3 sections. If you don't have enough because you want higher, make sure to buy an extra watermelon.
    5. Tip: Use 3 different size of bowls for each tiered layer, lay designated bowl on the correct piece and use as guide when cutting.
    6. Level off the top to flat as possible, but no worries as you'll then use skewers (at least 3 each layer) in the center to set your next layer on top.
    7. Continue til you have all 3 tiered layers secured with skewers.
    8. Decoration time: Start from the bottom up trying to create an S shape, use your larger pieces of fruit first and place where you'd like them using toothpicks to secure their position. Then use your remaining smaller fruit with toothpicks to fill in the gaps. Use mint leaves for extra greenery! And use whatever fruit you want, it's your creation!
    9. Perfect as a centerpiece on tables or a big display for any fun gathering where your guests can eat the decorations and can serve themselves.
    10. For serving, just remove the layers (removing toothpicks/skewers) and cut into slices, maybe add extra berries and you can even top with vanilla yogurt, whipped cream, honey, etc. Enjoy!
    11. If you plan to do it the night before, you can cut your watermelon layers but be sure to wrap each slice with cling wrap as to not have a dry outside and place in fridge. Better to decorate the day of for extra freshness and shine!

Best to have all your fruit ready and assemble at final location.
