If you're still in Manila City, I recommend that you go to the National Museum. There are 3 different types of museums in that complex. There's for fine arts, anthropology, and natural history. That's only a 4-minute drive from the Manila Hotel, and the entrance there is free.
As an American, you need to check out the Manila-American cemetery right there in BGC, Taguig. It's very historical, symbolic and beautiful at the same time. You can pay homage to your fellow Americans or brave soldiers right there.

the entrance to chinatown is on the left side bridge (Jones Brides) crossing pasig river. The bride ornaments are great and you will be amazed at the ark after the bridge. You should have align at Bininodo Church and not at Sta Cruz Church. be safe
You can also visit the pasig river esplanade which is situated just right a few meters ahead of Binondo., you can go there walking from Binondo bridge or Jones Bridge..

I couldn’t help but laugh when you visited that jewelry store and asked about the symbol on the men’s ring: Lucky Charm, not the cereal! 😂 My mom was very familiar with that area (Sta Cruz, Binondo, Ongpin, Quiapo). Actually the inhabitants of the Philippines (not yet named then) were actively trading with the Chinese way before the Spaniards came and when the Spaniards colonized Luzon and built Intramuros (intra=inside, muros= walls, walled city), the Chinese were not allowed to live inside the walled city. Chinese immigrants who converted to Catholicism were allowed to live nearby, a hilly part called binundok (mountainous), now shortened to “Binondo”.
You can tell the Chinese are all business-minded and entrepreneurial. Almost if not all the space in the ground floor caters to businesses like food stalls, jewelry shops, hardware shop, or they lease out the spaces.
