One Week with my Sourdough Starter // MOM OF 10 BAKING

  • Skillet Cornbread
    1 1/2 cups cornmeal
    1/3 cup sugar
    1 teaspoon salt
    1 cup hot milk
    Mix together then let cool slightly before adding remaining ingredients:
    1 1/2 cups sourdough starter
    1 1/2 teaspoon baking powder
    1 teaspoon baking soda
    2 eggs
    1/2 cup oil
    *Bake in hot buttered cast-iron skillet 375°

    I loved this video. I would love to hear a chatty video about how you've developed these skills alongside having so much to manage. You obviously have a lot on your plate, but then you keep learning and trying new things. It's amazing to me!

    Julie you're so experienced in the Art of making bread. What beautiful loaves, buns, cornbread, and pancakes you've put together, and keeping your family healthy, while saving money. Bread at the store is at a Premium for cost and nothing in value for nutrition, as compared to what you've put together here. You've got it down to a science. So nice your oldest son is a natural mechanic and fixed your Mixmaster. My youngest brother was like that and became a structural engineer. He was a carpenter while working his way through college, and regretted he didn't pursue that instead. Engineering can be quite stressful, even if you're good at it.

    If you heat your greased skillet up in the oven till it's hot it will make a really crunchy crust on your cornbread. Extra yummy!

    The sourdough bread looks so yummy! You had good helpers in Jeremiah, Samuel, Lydia and Benjamin. The pancakes looked tasty too! I used to make sourdough bread when I was a baking apprentice in the late 70’s. Loved it! Good to see you all again. Honorable cameos to Jason, James and Elsie. ❤

    Making bread has something fascinating….yours looks beautiful. I used to do Irish soda bread because it is easy and you don t need tools or fancy prep. I think making our own bread is a blessing and a joy. Sending love to all of you !

    I'm catching up on the last months worth of your video's. For some reason the algorithm was't showing all my subscribed channels. I had to actually go look to see if you posted. Anyway - i just wanted to comment that I can't believe how clean you stay making bread. After I bake (or cook) I have to shower afterward - I'm a mess. I guess you could say I really get into my work. LOL

    I just broke my kitchen aid mixer again. This is the 2nd time I broke the gear but the last time was at least 5 or 6 years ago. I do find sourdough is a bit hard on the mixer. Just waiting for someone to take it apart and fix it now!

    Here I am at the hospital, as I do not eat bead, feculent, lactose or in very small quantities , I add 10 g butter to my coffee with ham and eggs, eat supplement of double cream brought from home as prosciutto. The dietetic adds olive oil and butter . Feel blessed to have received such an understanding response. 72 years old. Julie I just love your calm and your attitude with your kids. At home we were a lot in a small space and learn to concentrate. It brings back memory. Eventhough I probably wont make them I would love to know more about cookies and how to make a pie (the dough).

    Wow! I learnt so much from watching this sourdough video-the first being I add a little to much discard to my mixes. Aaaaand I am going to try sourdough pasta-that is totally ingenious.
    I make sourdough banana bread and banana pancakes as my grand who is 5 going on 15 always says they are his favourite, I also do not use a recipe except fly by the seat of my pants and they have always worked out.
    I found using spelt flour will really bring my sourdough to life if it is a little slow on the rise.
    Thank you so much for the share and yes another sourdough recipe would be lovely. I mix all by hand as do not have a mixer though definitely thinking on it. Again thank you Julie

    Yes! I’m very interested in your way of making bread. Years ago I use to make bread a couples times a week but it would take about a week to make. This particular bread recipe you used potato flakes . I lost interest very quickly due to teaching at school and working on our farms there just wasn’t enough time in a day. I really enjoy your channel! Thank you!

    I see that you soak your nuts and grind your own wheat for the best nutrition. Have you tried sprouting or buying sprouted wheat berries? I buy sprouted hard white wheat berries from Azure. It takes some serious adjustment for my sourdough recipe, because the yeast goes bonkers with all those nutrients! It’s hard not to over ferment, even with plenty of salt. So far I am up to about 20% of my flour being sprouted in each loaf, but I am hoping to build up to 100% for the most nutritious bread.

    Are you getting your HWW berries from azure? I’m finding grinding my own wheat vs using AS’s flour is a steep learning curve. Thx for the tutorial ❤

    Hey Julie! Do you have tips on how to prevent mold in the starter? I don’t use it daily, but whenever I’ve had starter going it gets fuzzy. We do live in a humid climate so maybe that’s it? It’s discouraging.

      I haven’t had mold in mine, although a friend of mine who lives nearby did have a hard time with that. She started using a dehumidifier because their house was having a mold/mildew issue and they were working on eliminating the humidity, among other things. It helped her starter as well.
      Sourdough starters are partly made up of what is in our air so it makes sense

    Any thoughts on making gluten free sour dough bread, rolls etc? I have my started “started” with white rice flour but not sure what flour is best moving forward. Thanks.

    I’m just curious, and you don’t have to answer, have you had the kids with Gluten Sensitivity/Intolerance checked for celiac disease or something else? I’m going through a lot of testing right now to work out what’s causing all my stomach and bowel issues and celiac and Crohn’s disease seem like the most likely options right now.

      Probably most likely is the glyphosate sprayed on grains, and they aren’t able to ferment in the field before going into the combine, so it leads to sensitivities! Joel Salatin has a podcast on it

      @@narrowpathfarm I haven’t heard about that before. I haven’t followed a whole foods/natural foods diet etc ever. So learning about all of this in ways that doesn’t overwhelm my neurodivergent mind is good and I’m trying to slowly make changes based off my income and other disabilities.

      Yes I would agree that the glyphosate could be a big issue. Although while you’re working on healing your gut I would stop eating all grains. Whenever you’re ready to try them again I would only eat organic wheat, and if possible grind it fresh and bake it yourself.
      The GAPS diet is worth looking at! Very healing

      @@jasonandjulie I’m not allowed to stop eating grains until after the endoscopy cause if it’s celiac, I need the gluten in my system to give an accurate diagnosis. I’ve not heard of the gaps diet so I’ll look into that
