Both ! They actually talk about this in a later interview : it's "demo de baile". It's not a full choreography down to the minute. They know the music, the Tango moves are planned and prepared but there's room for improvisation and surprises, depending on the mood.
A little bite of both. There is not professional dancer that improvise an entire song. But this couple and, Clarissa Jonathan, are the best improvising.
Aside from the immense performance, what stands out is just how much fun Seb and Roxana are having. Pure joy!
