Baklava:
130g butter
Approx. 12 filo pastry sheets
For the base:
150gr coarsely chopped pistachios
4 tbsp of the melted butter
2 tbsp powdered sugar
Cheesecake mixture (all ingredients room temperature!):
250gr mascarpone
500g quark
200ml whipped cream
2 eggs
200g sugar
2 tbsp cornflour
1.5 tbsp flour
1 tsp vanilla extract
100ml milk
Sugar syrup:
150g sugar
150ml water
A few drops of lemon juice
Preparation:
Preheat the oven to 190° top/bottom heat.
For the sugar syrup, place all the ingredients in a pan and simmer for 15 minutes over a medium heat and leave to cool completely.
Roughly chop the pistachio kernels and mix with the powdered sugar and melted butter.
Now we start with the filo pastry. To do this, take 2 sheets of filo pastry and place them in the tin greased with melted butter and brush with the melted butter. Repeat this process 4-5 times, brushing each time with the melted butter. Then cut off the edges and place in the middle and brush with a little butter. Bake in the preheated oven for approx. 10 minutes until lightly browned.
In the meantime, prepare the cheesecake mixture. To do this, put all the ingredients in a deep bowl and mix until creamy.
Remove the springform tin from the oven. Place the pistachio mixture on the base and press down lightly with your hands. Spread the cheesecake mixture on top and smooth down.
