Penang was once described as the Pearl of the Orient. It has beautiful beaches, rich history, culinary delights and friendly people. You should learn more about Malaysia. After all we are members of the Commonwealth.
You stay in Malaysian Chinese area that why more Chinese style food, if you go to Malaysian Indian area you get Indian food. To try Malay style food you need to go to Malay area. Some area such as food court you can find all kind Malaysian food culture (Malay, Chinese, Indian and other race in Malaysia because Malaysia truly Asia)
To know Malaysia is to love Malaysia bro, think positive about Malaysian diversity and melting pots Eastern and Western cultures, foods and cuisine here 🇲🇾🌺♥️
chulia street and love lane are some good food spots. Do visit the assumption church and museum, as well as the beach street near where you arrived at. then go to the armenian street. You can see a huge architecture difference in doing so, and some buildings have a blue plague that tells the building's short history.
The ladies workers at the oyster stall you ate are probably Burmese. The owner who is also the cook is a local Chinese. The Japanese oysters are as good as the New Zealand ones.
Malaysian dining hours are open from 7 a.m. to 2 p.m., close after 3 p.m., and open until 6 p.m. for late night snacks,The Chinese New Year is coming at 12 o'clock on the evening of the 28th. There will be fireworks, lion dances, and New Year food. It will be very lively.
25:45 Malaysian vendors don't hustle travellers - that's not the culture. If you meet vendors in Malaysia who hustle you, they are inevitably foreign migrant workers (mostly from Indonesia, Bangladesh and India) tending shops on commission basis - the more they sell, the more income they get. It's estimated that foreign migrant workers in Malaysia number about 7 million or about 22% of Malaysia's population, doing so called 3D (Dirty Dangerous Difficult) the locals tend to shy away from.

The Penang food pamphlet you got is a good guide to good hawker food. There are many hawkers that received MICHELIN Bib Gourmand rating.
