    Very happy to see Henry of Harcourt featured. Had a cafe for a few years with their ciders. Lovely people, deserving of exposure, and they know cider.

    I like that he doesn't try to scare people away from making their own. You hear from a lot of scaremongers how only a trained professional can make alcohol, if you make it your own you'll go blind, you'll die. Here he just puts yeast in the juice and says ''that's it, you've just made cider.''

    Sorry but this is not true, been trying to make ciders I tasted when job searching in the UK, and got a contact that sends me "cider yeast", and it doesnt work! Months with cloudy, acid, horrible tasting cider. Vinegar! No one tells you the secret because it is how they get their money. I get that.

      A little late but you could try an ale or Saison yeast. You could also try a wine yeast like K1-V1116 just make sure to give it a dose of yeast nutrient. Keep it somewhere it can ferment around 18c. I use that to make a Raspberry Perry and the flavor is 👌
