That is an excellent example of how-not to do a Philly Cheesesteak. Trust me. Ribeye, cooper sharp, light mayo on the roll, get that roll off the flattop (put it on top of the steak/cheese to steam gently), and never ever put green peppers on a Cooper Wit.
