Yeah, you have to fold in the caramel otherwise if you mix it willy nilly the cream will fall flat. This happened to me in December 2022 and we had peppermint shake after that.

I add 1 packet of lemon jelly to help set the caramel and cream mixture. Dissolve jelly in 125 ml boiling water, then add 125 ml cold water to jelly. Cool off slightly and add to cream mixture. You wont even taste the jelly, but it helps to set the cream and caramel mixture. Leave in fridge for few hours before serving.

What if you whip the cream at the same time as the caramel treat?, it will still be fine?

Use Orley whip as an alternative to fresh cream. Grate the chocolate into the mix to enhance the minty taste.

Fresh cream is preferable by most people, but orley whip could be an alternative depending.
