The best and most wonderful Amazigh couscous with beans, vegetarian and healthy, with buttermilk.
Delicious and easy couscous vegetable pan prepared in 20 minutes. To do this, zucchini, peppers and carrots are cooked al dente and deglazed with vegetable broth. The couscous is ready in just a few minutes and tastes delicious. Small tomatoes, red onion, spring onions and parsley complete the dish. The one pot pan is great for lunch or dinner and can be eaten warm as a main course or cold, e.g. as a side dish with a salad. When serving, you can add some nomad cheese, then the dish is vegetarian - otherwise even vegan!
📝 Ingredients for the recipe:
3 tablespoons olive oil
2 cloves of garlic
150g courgettes
150g paprika (red)
150g carrots
350g vegetable broth
0.5 tsp salt
0.25 tsp pepper
0.5 tsp mint
200g couscous
100 grams of tomatoes
1 red onion
2 spring onions
0.5 bunch of parsley
