In kenya due to gas prices rising in the last three years and electricity prices remaining stable;electricity is the prefered option with over 95% buying electric ovens today;especially convection oven they really consume less and one doesnt need to worry about consumption :For example a 6 tray convection oven will consume about 3 units per hour and 12 tray convection oven will consume 5 units of power per hour
In conclusion it will depend on availability of fuel and cost in your country ;its a case of how many units does the oven consume (gas or electric or diesel) and what is cost per unit of this fuel and how easily available is it?
In kenya diesel is still prefered for big size rotary oven in cases where your production exceeds 3,000 loaves per shift
