“Why is everything in Japanese” Is hilarious because canonically the ace attorney franchise takes place in Los angles USA. It actually doesn’t make any sense why there’s so much Japanese writing, but obviously it’s because the series was made and popularized in japan so they didn’t want to have writing people couldn’t understand when watching.
Uhhh, no. The franchise is set in Japan. Its only the English translation that is set in LA, which has a sizable Japanese population relative to the rest of the US. There's so much Japanese writing because that's where it's supposed to take place. The localization changed the location and all the character names to English because 1) Japanese puns would go over the players heads, where English ones wouldn't and 2) the localization is from that era where things had to be changed because localizers thought American players would be too alienated by content not set in America. At this point it would be too confusing for the anime to use the Japanese names because the localization is so popular. If anything there are two "canons"- the original canon set in a mostly normal Japan, and the localized canon where the games are set in a California with heavy Japanese influences. (The official explanation is that this version of California didn't have anti-Japanese immigration laws during the late 1800s and so there was more cultural influence and diffusion.)
