    Making your own salted fish 咸鱼 at home is super easy! Salted fish is used in Chinese cuisine to enhance flavours in vegetable and meat dishes. My favourite way to eat salted fish is steamed with minced pork. I always add ginger to all my salted fish recipes.
    Ingredients:
    6 gutted sea trouts (thawed and cleaned)
    1 tbs rice cooking wine
    1/2 cup table salt (coarse salt)

      Steam the fish when making rice. Drizzle with fish with peanut oil or lard. Drizzle some peanut oil or lard onto the rice...yummy

    It's suprisingly simple. We don't have the right environment to dry it in the sun in Europe, but we usually do this during winter and hang it in the room/space where the boiler is installed. It only took 3-4 days to become dry and hard.

      Yes we also do this on the Kate fall and early spring…otherwise too make bugs and critters (cold weather best best time) 👍

      Lots of different want to eat it…I mostly steam it but you can use it to flavour other dishes as well

    Tks for sharing ! I like to try this as well . After done , you said put them in ziplock bag . Do I need put in freezer again or just in the cellar in basement ? How long can they last ? Tks!

      If I am not eating for a while I place it in the freezer. It will last much longer for months (up to 6 months). If you are planning on eating it right away, storing it in the fridge and/or cellar for a couple weeks is fine.

    Not having that kind of weather, could the fish instead be hanged in a “smoke box” to fully cure and add flavor?

      I have not tried that method as we like the breeze and sun to dry it up at least for the first couple days before we bring it in to hang until it completely dries

    It is not cold enough where I live. Can the fish be placed in the refrigerator after it is salted?

      No it has to be air dried

      I don’t own a dehydrator so I have no idea. Please do let me know if you try and how it turns out. I know my sister uses her dehydrator to make pork and beef jerky.

Thank you for the reply, I appreciate it surely! You can see the Dollmont family reunion back in 93. That's my family ! I'm looking into pemmican and was curious if that same thing could be done with fish? Thank you dear for the reply.

      When I did it yeah they were flys coming around but the sun and wind would keep them away and I guess it's inconvenient for them to try to lay eggs or eat the fish, I would also often come by everyone 30mins just to check on them.

    My mom says she haven’t seen any good quality salted fish in the US in a long long time.
    My father tried making them before but he is gross and will eat anything even if it’s not dried properly

      When you press on it and it’s hard and not soft. No need to be rock hard but thoroughly drying ensures it can be kept longer 👍
