Alentejana is a classic Portuguese stew with pork and clams but this is not your typical Alentejana

  • Alentejana is the amalgamation of pork and clams and it is crazy delicious. This Portuguese classic is not usually made with beans; and the potatoes are often deep fried. Feijão or beans are a staple in Portuguese cuisine and as such I thought would be appropriate in this home style version of the beloved classic. Mangia!

    1 gujillo Chile
    2T evoo x2
    1 1/2lbs pork but
    1t kosher salt
    1/4t black pepper
    6 garlic cloves x3
    1/2c onion x2
    2T tomato paste
    1t sweet paprika x2
    1/2t smoked paprika
    1c white wine x2
    1c chicken stock
    8oz pinto beans
    2 bay leaves
    2lbs potatoes
    1 1/2lbs small clams
