  • OBSESSED WITH OLIVE OIL DOCUMENTARY - CHAPTER 5: TO YOUR HEALTH
    The Mediterranean diet is healthy and delicious and extra virgin olive oil is a staple ingredient of this diet. It contains polyphenols and a high level of monounsaturated fats along with vitamin E, K and A.
    It's unique composition and high oxidative stability are unlike any other oil and it's this oxidative stability, contrary to popular belief, that makes it an ideal oil to fry with. And when properly harvested, produced, transported and stored it retains high amounts of fantastic, throat burning antioxidant, and anti-inflammatory substances.
    There are certain substances usually referred to as polyphenols with the effect of opposing the damage of free radicals. Free radicals act like the rain, a constant bombardment of noxious substances damaging the walls of our cells gradually resulting in their death.
    So, in olive oil as in other foods that are part of the Mediterranean diet and again, it's not only the olive oil, or a single part of the diet but the eating habits overall. So, olive oil is rich in polyphenols which have a very specific role in fighting free radicals slowing down the aging of cells and slowing all processes which may result in the death of cells as well as in the growth of cancer.
    The tendency for now is still that people prefer lighter oils, actually with milder taste and smell but, since I am also very interested in the health aspect of this product, so antioxidants, polyphenols, vitamins, and everything we kind of force them to go for a stronger one. So, the main thing I ask my clients when they taste an oil is if they liked it and why they liked it.
    But now there is a movement, that I’m not very fond of that associates the oil mostly with its health benefits. and it starts to resemble medicine although natural, but still medicine. It's all true. The substances in a quality extra virgin olive oil are very, very good for our organism. Without a doubt,
    polyphenols are the most powerful natural antioxidants that exist. They fight free radicals, and they’re anti-aging. But not at a cosmetic level but rather at the cellular level. And it's all true.
    However, here in Olieria, I would like oil to be seen as a beautiful thing and very good to consume. Something that brings us pleasure. That it's also good for us, is a beautiful thing. The health benefits of
    extra virgin olive oil are known to everyone. The effects on our health are positive thanks to the polyphenols, biophenols, and antioxidants present in the oil.
    However, we also aim, especially in our courses to point out the hedonistic aspect of the oil to try to understand the positive tasting notes of an oil to best appreciate it when used in our dishes. The way I like to look at olive oil is first as an extremely tasty food the tastiest food you can get and also good for your health. I remember that my father consumed olive oil to his last day.
    And olive oil, even raw, one spoonful every morning is the best way in the world to avoid one particular disease. Not a real disease but more of a physical inconvenience the inconvenience of constipation. Those who consume olive oil every day, a spoonful or two in the morning don't have this problem. Even from a health point of view and not just from the culinary point of view it’s important there is always a bottle of oil on the table.
    It's also important to have the right bottle for the aficionados. And it is important for our health because if the oil is good then it's good for us and that is important.
