This is a very tasty, soft coconut kolukatai,.. Very easy steps.
Ingredients
Kolukatai or idiyappam or raw rice flour - 1 cup
Sugar - 3/4 cup
Coconut - 3/4 cup
Milk - 1/4 cup
Cardamom powder, cooking camphor, ghee.
Steps
Dry roast flour in low flame, for 2,3 minutes, until you get nice aroma. Colour should not change.
Add roasted flour, sugar, coconut, 1/4 tsp cardamon powder, 1 pinch cooking camphor, mix well all together for 2 minutes.
Sprinkle hot milk and make it as a soft dove as shown. Add 1/2 tsp ghee. Apply ghee on palms and make small small kolukatai as shown.
In a steam plate or idly plate, place a wet cotton Cloth. Keep kolukatai one layer. Don't over load. Keep in steam in medium flame for 10 to 12 minutes.
Take out the plate, wait for few minutes.. Now take out carefully.. It will be very soft.

Hai.. Yes you can add.. But color and taste will differ..
If you add Nattu sakkarai don't add milk, add hot water

Hai.. Yes you can,.. But taste and color will be different. Don't use milk,.. Add hot water
