They do track “effective strikeouts” sort of. That situation is called a fielder’s choice: the fielder could’ve thrown to first instead to get the batter out, but chose to get the out at second. The batter isn’t credited with a hit, but as you said, it’s effectively the same as a strikeout

Video idea: Mario Super Sluggers on Daisy Cruiser day with only power hitters but every run scored triggers Peaches to appear on screen, and this means that if more than one run are scored close to each other there are multiple videos of Peaches on screen. In addition, a wheel decides who should have Bowser as captain and Bowser can't be eliminated!
