How to: Omelets

- Home cooked dishes that work for both vegan or plant-based diets as well as standard American diets. We take basic meals and show both ways to explain how easy it can be to please everyone in your family without eating out all the time.
Omelets
WFPB - Chickpea omelet
1/3 cup chickpea flour - See note
½ tsp onion powder
½ tsp garlic powder
½ tsp black pepper
¾ cup veggies of your choice diced small (I had peppers, onions, potatoes & mushrooms),
warmed
1/3 cup water
Optional toppings - salsa & green onions
Cheese sauce*
Mix spices, water and chickpea flour till combined. Heat up a 6” nonstick skillet on medium heat till you can feel the heat when you hold your hand a few inches above the skillet. Add the chickpea mixture and spread in the bottom of the pan. Let cook for about 2-3 minutes then add the veggies and flip the omelet either in ½ or completely over. Let cook for another 1 minute
then flip again and let cook for about 2 minutes. Serve immediately and add some cheese sauce, salsa & green onions. Serve with greens if desired.
Note: Chickpea flour can be purchased at the store or you can blend dry chickpeas in a high-speed blender till flour consistency.
*Cheese sauce
1/4 cup raw cashews
1 cup hot water
½ cup Well your Word cheese sauce mix (Cheese Sauce Mix - wellyourworld....)
2 Tbsp jarred roasted red peppers
1 Tbsp Mrs. Dash chipotle seasoning
Place the cashews in the hot water and let sit for at least 20 minutes. Blend the cashews, the water the cashews were in, cheese sauce mix, red peppers & seasoning in a high speed-blender till smooth.
