How To: Pot Roast 2 Ways

Roasts
Cauliflower Roast
1 small - medium head of cauliflower
2 lbs. small potatoes
2 - 2.5 carrots, chopped into large pieces
½ large onion, chopped into large pieces
1 Tbsp low sodium tamari
½ tsp no salt seasoning (Mine was called Scarborough Fair from www.cjfarmstexas.com) The seasoning has rosemary, parsley, sage & thyme
Preheat oven to 400 degrees. Remove leaves from the cauliflower and anything so it will sit level on your baking sheet. I used a well-seasoned baking stone, but you could also use foil or parchment paper to place the vegetables. Poke holes in the potatoes and place on baking sheet with onions and carrots. Mix the tamari and seasoning in a small bowl then smear onto your roast with a brush. Add any extra seasoning onto your carrots and onions. Bake for 45-60 minutes based on the size of your cauliflower. Slice the cauliflower into “steaks” and serve with potatoes, onions and carrots. I added a touch of vinegar to enhance the flavors.

Beef Roast
1 - 3 lb. boneless chuck roast
Salt & Pepper
1 cup water
Place the roast in an electric pressure cooker. Add seasonings to both sides then add water.
Cook for 50 minutes then let the cooker naturally release for about 20 minutes. You can go longer if you want it even more tender. Serve with mashed potatoes and vegetables of choice.
