For EVERY move there are counters. To claim that you have defeated the side mount escape by simply cradling the head is ridiculous. Stop him from posturing out, and he can simply move in the opposite direction and walk his feet around, or dive his right hand under for a sweep, or roll to his knees (face-down) and grab a single leg. This is like a BJJ instructor teaching students, "Ok, I just pulled this move out of my ass that you use against boxer in a stand up fight."
The name of the technique is called the D'arce choke, not collapsing vice. I like the way he claims they made up the technique to counter having your back taken yet fails to explain how to get the underhooked arm off of your back and hip. Also, the finish is incorrect and you should be cross facing with the left instead of cradling the head.

This is a really old San Kaku jime hold. there are some BW vids of this move on youtube. Not sure if it's shown from the side but definately rolling.
