    the native tribes in washington prefer chum salmon for smoking because it has less fat, so it preserves better and the texture holds together better when smoked. but i've caught many chum and when freshly cooked, it's an excellent fish. not a trash fish at all. pink salmon is most commonly canned or used to make fish fertilizer.. it's ok when freshly cooked but doesn't have a lot of flavor so it needs some seasoning and saucing to make it good.

    Pinks and chums are good for those who aren't really fond of a "fishy" kinda taste, they go well with sauces and absorb them well, springs/ king really is good especially when you get them before they head upstream when they have fed heavily and they have lots of fat, and coho is really good too especially for those who like them but here we get a special run of coho that feed mainly on crab larvae and the meat is super red and sweet.
    Awesome to see a video like this, get the stigma away from chum and pinks as being "trash" or less desired.

    This test reminds me of the world we all live in. Most people will not/have not tried something based on what they've heard from others. If everyone had an open mind and tried new things, it'll will bring humanity one step closer to greatness

    This is one of my favourite things to do with friends over the years with many so called " Rubbish fish " . Never let your ears decide what fish is good to eat as that is always a job for taste buds .

    To me salmon is kind of like pizza -- even "bad" pizza is pretty darn good. And good pizza (and salmon) is really, really good.

    My personal favorite is chum, it has that natural protein sweetness from its meat when you clean it, sorted like rock fish and black cod. In BC, Canada, people really hate chum. Like Victor said, "no trash fish, only trash cook".

      @@lilaclemonade686anywhere in the ocean around Vancouver, and many of the rivers and tributaries around it, the fraser river is most prevalent.

    Fresh Pink is pretty good but the issue is the texture changes once frozen. It has been too long since I've had Chum.

    great video idea, was fun to see the "garbage" fish being liked by a lot of the people. I enjoyed the coho i brought home from Oregon last year. Like you mentioned, hard to eat a lot of the King because its so rich in oil. Leaner is easier to chow down on. I do love the fatty belly for sushi though, less so cooked unless over cooked to get it ChrisP, haha sorry had too lol

    We were testing stuff at our restaurant, we tasted a locally caught chum as a nigiri sushi and it totally surprised me. We were just going after the roe and sack at first but the flavour of the chum as a nigiri sushi was really surprising, i’d say its one of the most intense salmon ive tasted as a sushi. Then my coworker/friend reminds me some of the highest end salmon in japan like tokishirazu and keiji are often times chum, so yea every fish can taste good, what was looked down upon certain culture can be another culture’s treasure.

    All Salmon caught in the salt have their own unique fantastic flavor. Pinks tend to be smaller and therefore have less of that fatty, "buttery" quality to them but they are still fantastic. Chum get a bad rap only because the quality and texture of their flesh turn so quickly as soon as they're making their way to fresh water to spawn.

    Wow super surprise. It’s amazing how many people like the pink and chum salmon as opposed to the king. Not sure if it was a different cooking method but that just goes to show you if you cook salmon the proper way it’s all good. Thanks Taku this was a great video.

    When it comes to food, people should really try diiferent varieties of brands/ingredients even when it comes down to something as simple as a dressing for a salad like ranch. People have a favorite brand of everything but if you eat that same brand for years straight eventually you hate it or will find something you like more from taste testing. well thats how i am so im really not surprised people enjoying new stuff more so than what they usually eat.

    I love salmon-- sushi, sashimi, and grilled rare or medium rare. Never had the chance to do a side-by-side comparison of different types, but I think that would be interesting. Like most other salmon lovers, I really appreciate the oiliness and delicate feel of the flesh. Northing worse that overcooked fish! Thanks for sharing.

    So many people talk crap about pink and chum. They might be eating them when they’re all spawned out and half rotten bit more likely just regurgitating other peoples words. We catch lots of chrome pinks in the salt down here in Puget sound and I think they are delicious. My biggest was 7.5 pounds 😃 They don’t freeze all that well but if you make salmon burgers or smoke them you can freeze them just fine. I’ve always wanted to do a blind taste test with the nay sayers! Was so pleased to see this! 😅 And y’all! This Kelp Chili Crisp is friken awesome!!! Thanks so much!     Nice Video, thanks for sharing this with us. Ran into an old time fisherman well in his 80's the other day in Southwestern Oregon. He told me that Chum Salmon is one of his favorite salmon to eat. I found that hard to believe until I just seen your video.

    Great vid Taku. I’m sure now or perhaps even before you may decide to prepare/cook each version slightly different:
    - pink - you said a bit dry or lean it looked like it also. So I would probably put more olive oil while cooking. Maybe even use canned oyster oil.
    - king especially the belly fatty part. I would use lemon to try cut down the fattiness.
    - chum. Seems in between the above. The appearance doesn’t look as good as King. What are your thoughts for dipping in batter and deep frying.

    It was interesting to get the advice from Alaskans and see which salmon they wood pick . yes I would think that they would all taste good espacaily on the grill. And that pesto grilled salmon sounds great my stomach is saying feed me as I'm writing this . time to eat thanks Tacu and Joslin

    Great video Taku. Would love to see you deep fry the collars of all three of those nice fish. And have a "chicken wing" taste off between the three. I think things might get even more interesting. I think you'll like that chum salmon even more.. Or you should've made some 🍣 out of them and you can blind taste test those a lot easier. Or a Pok'e bowl.

    I am so so silly glad that you're doing this. when I was up in homer in 94 and we needed to buy a shovel at a hardware store there was literally a bathtub sized freezer full of "chum or dog" salmon and they were FREE out front. it was like 5 bucks for the shovel and a 2 and a half pound fish for free? I mostly use mesquite because it is available, but I've seen other woods used, and would be interested in other woods used. I also want to see more collaboration with cali catch and cook. I have a tip for you, put some flour, some malt, some barley , some any kind of fiber with some natural salt water, they digest it and they poop out the bad stuff, so it becomes all good. seriously it's that simple. you can use fresh water too, or di, but I just typically grab a few kitty litter containers on the beach when i'm finished kayaking. then let it settle for a bit so the sand settles... we are talking about mussels... and I think we agree they can live a very very long time I feel the same about most species the bigger the worst. More toxins, less sex drive, let them make some babies we can catch!

    Our mom would make different dishes with canned pink when we were kids. My favorite part was the peices of back bone that my mom would pick out. I was sad when I bought canned pink and it didn't have bones.

    Chum are thee best fish to dry just plain out in the open air on drying racks (especially when it's from my mama's home island Nunivak) 😍 we call it macutaq (mah-chew-duck) so so very neqniiqapaa

    Chum is ok. Unfair to test with king. Great idea for a video though, and shows that even junk fish are still pretty tasty.

    Just got my kelp sauce or Tacu sauce as I call it haha. It was good. Tried it with shrimp. I will be more generous with it next time. I didn't wanna make it to spicy. It wasn't. Great flavor. Thanks man! Hope you do great.

    Cool Video!!! Here in Toronto we don't get those 3 species of salmon, and they're not from the ocean, they're from The Great Lakes, in my case Lake Ontario. Of the 3 salmon species we get here, I like Kings the least, they're not that fatty and dry out easily. The other 2 species are Atlantic salmon, which are protected and have a limit of 1 from the lake and zero retension in the rivers; and Coho salmon which aren't protected at all and are dwindling in numbers. #1 Atlantic, #2 Coho, #3 King. To me unless you really take care of, prepare and cook a King properly it's too dry and not that flavorful. Atlantic's and Cohos are much more forgiving when cooking because they've got more fat content and have much more flavor. One day I'd like to try salmon from the ocean to taste the difference.

    Love rich omega 3 fish like salmon. So far from all the salmon I try. I like the sockeye salmon more. But, if I had to choose one I take the chum too.

    sometimes there is even slight flavour variation from fish to fish. i think i could always pick out the chum.

    So I've recently just had the opportunity to taste all salmon side by side because I have developed a heart problem and my diet has become restricted and have been sort of living off of fish, and I got to say tasting Atlantic, Chinook, sockeye, and pink salmon I was surprised Atlantic is the best tasting, followed by sockeye, Chinook, then pink last. However it could've just been where I got my pink salmon it's not disgusting but not as good as the others never had chum, coho, or hump salmon though.

    Chum are really great for smoking and canning. Its just generally not comsidered a good fish for the table. Its really oily and whatnot.
