What! Texarkana, we stay there everytime we travel to see my Mother-In-Law in Louisville KY from South TX. Texarkana is our 10 hour drive resting stop.
It's funny, we too left the heat wave for the mountains in Colorado. You should come visit in Creede! There is a lot of dispersed camping here. We love watching you cook, Kelly!
I just stayed here a couple months ago. I usually go for the dispersed camping, but I got into the area late and there was a spot open there, so I took it. The camp host was kind enough to give me a detailed map of designated dispersed spots in the area. Great spot!
If you can find some mountain sage crush it and put it in a Ziploc bag, you can breathe it in and it will help greatly with the altitude headaches. It's usually pretty plentiful in the mountains. I grew up in Colorado but have lived in Arkansas most of my adult life. When I go back, I frequently get altitude headaches.
What a relaxing place! The camp site is really green and picturesque. Loved your mtb ride! Maybe a green chile salsa with the shrimp enchiladas. You can use corn chips, polenta, or homemade masa torts as a base and make an enchilada pie! It would be cool to see you riding some of the uphill sections on the rides....to see the how one has to earn those glorious meandering down hill stretches. Loving all the cool places you have shown us.
So happy you guys are enjoying our state. The Grand Lake area is real nice. Try out Windy River Campground. Nice big sites. Safe journeys. Love your channel.
Ouray is our favorite spot in Colorado. Maybe Telluride, but too popular. I grew up spending the summer in Colorado every year until I was about 18. Love Tin Cup near Gunnison also...and down the Taylor river toward Taylor Reservoir, great camping!
The best way I have found to cook rice is in the oven. I just wonder if you can cook mexican rice in the oven....hmmmm....will have to try that. Fun video guys as always. Thanks so much for all you do.

I discovered this channel two years ago in August. By far the best camping life channel and feel close to home with these guys from Texarkana. My mom grew up there. I used to visit my grandparents and play at Spring Lake park. My cousin lives with her husband and son on Arkansas side.
We did a 14nr our second day in Colorado. Plus we were 60. Not the smartest idea when you are from 200 ft elevation south Arkansas. We accomplished the climb. But it was major tough!
Carrot cake is my weakness. I can't walk by Carrot cake without having some and that started back in the early 90's for me. I had a delicious Carrot cake in Laughlin Nevada.
If you like carrot cake, the best carrot cake in the world is at the Golden Lamb Hotel/Restaurant in Lebanon Ohio. There is also great camping near here!

The small furry animal may well have been a pika. They live at high altitudes. Saw them running around our campsite in the mountains of south central Wyoming not far from the border with Colorado a few years back.
Love your adventures. I also enjoy a similar cream base shrimp dish to yours....maybe try adding a view chipotle peppers. buy them canned in adobo sauce. It might be that other ingredient you said was missing : )
I luv your videos but I'm curious do you all carry a handgun when your up in those mountains? Lots of wild roaming around especially Mountain Lions...I doubt they'd be too friendly 🤪

Good vlog! Kellie, I have a suggestion for the enchiladas. A pinch of red chili pepper flakes and lime juice in the filling mixture. Possibly a touch of lime zest in the sauce as well. See if that works. :-)

Sooooo what you made is considered a wet burrito, because enchiladas are made with corn tortillas. I'm sure it would have tasted a lot more different if you had used the corn tortillas. Looks like you found the perfect place to camp not just where you're actually camped but Colorado itself the rest of the country is burning up LOL

When my husband and I visited Brianhead, Utah, a few years back and we're struggling with altitude sickness, one of the locals swore by eating a can of peaches. Have you all ever hiked any 14ers? Colorado has a lot. I did two in one day last year (Grays and Torreys) - it was a great experience and I plan to keep doing more over my life. Thank you for all you do - you all are fun to watch and I learn a lot!

Good video! I highly recommend to you guys to go to taylor park reservoir at Gunnison National forest . There is a lot places where to camp for free. The town of gunnison is close from 59 miles and you have crested butte very close what is a mtb paradise .
From Idaho here. Strange watching you in a whole new geographical location... The area is so different from what I am used to seeing you in. In a few weeks, I am taking a road trip through my native Idaho to find myself again. Need to do that once a year, if not more depending on how life is... No destination plans, but more North, last minute.... I have to do it that way. Keeps me on my toes

Maybe y’all should look around Folsom, New Mexico to camp. I have a client that has a ranch out there and posting on Instagram how cool it is. Looked up the forecast out there and highs in the 80’s and lows in the 60’s
Those enchiladas looked fantastic! I prefer flour tortillas for my enchiladas when I make them and have a very similar recipe for my Mexican rice. Always love the ride alongs on the mountain bike trails. Colorado is so incredibly beautiful!! -Hedy

I live nearby. You should rent inflatable kayaks from Rancho Del Rio and float the Colorado from Pumphouse put in to Rancho Del Rio.

Ya should come to Minnesota, Crosby-Iornton. They have what looks like bad ass trails, seen a couple cool man made jumps and camping at the mine pits

Maybe when they make the shrimp enchiladas they use some kind of shrimp bouillon for flavoring!!! To enhance the flavor. I bet they do!!!!!
On those flour tortillas, if you dry fry them a little on each side it’ll crisp them up some and make them a bit stronger for the enchilada sauce

Some stores have oxygen in cans that helped me in the Colorado elevations.....not expensive!
Our avocados still had the stem and the brown fiber stuff but we ate them anyway 😂

I say its a farmer's tan regardless of what the real activity was. If it gives you a tan line anywhere that a bathing suit wouldn't it qualifies. 🙂
