    You are the first TH-camr who mentioned running their tap. Most just run their tap to wash dishes, wasting so much water. As you are such a great steward of ‘everything’ I have no doubt you don’t ever waste water!

    What a wonderful tomato canning video. I love braising cabbage with tomato juice as a side vegetable. It becomes sweet and delicious and so comforting!

    Good Morning Ms Jessica, I need to thank you so much for your amazing videos! Today was talking about making Chili soup base. I almost finished my Tomato canning. It feels so good to be able to preserve this food for the future.
    I have wanted to get a Freeze Dryer for the past 30+ years but have not been blessed with it yet. I am alone now at home except my brother has been living with me now for 4 years. We are both disabled and help each other out.
    I don’t have a regular dehydrator either so I line my baking sheets with foil and put the tomato skins in the oven to dry. I still need to mulch them up but have got about a half gallon of dried peels. I can’t wait to get to use them.
    As usual, I need to tell you how wonderful I think your family is. I’ve never seen a family work so good together. I’ve not seen your kids fight or argue ever. Watching each of them pray before they eat is so good to see. I believe God has blessed you and Adam by giving you such well behaved children.
    Your younger little boys are so funny. I think it is Thomas? that likes to do googling eyes 👀! He is so sweet! As are all your kids.
    On this Sabbath day, I pray that God will continue to Bless You and your family. You deserve all he gives you always keeping God front and center in your lives.
    Thank you for giving me so much joy, both with your recipes and information but also to enjoy watching your family grow up.

    I'm in SC and my tomatoes were done by the beginning of August!
    Last year I was sick in the summer at the height of my tomato production, so I froze a lot and did projects with them in the winter. This summer, I had my 14-year old daughter blanch them for me before I did my canning projects. It was nice to work with her on the kitchen, as I was usually prepping jars for canning, other ingredients needed, etc.

    My mom always made end of the garden soup ! She would can onions carrot tomatoes cabbage Lima and green beans what ever was left ! That soup was so good come winter

      I did this to as a young Homemaker and my husband took a jar of it to a customer of his. She really liked it and asked for a recipe and of course I was at a loss because I called it whatever is left in the garden soup. As you commented it had beans peas carrots onions tomatoes just whatever I could find and it was always different but always good.

    I have canned full meals and things like chili, stew, soup, burrito in a jar.....and I also have separate foods canned. It's good to do both/and.
    And if mama is sick, food can still be had 😊

      Same here-I can ingredients (tomatoes, beans, meat, etc) and also soups, stews, pulled pork, and so on. I like having both, the home canned ingredients come in handy when I feel like cooking and the prepared meal stuff for when I need a break from cooking. 😊

    Great effort!!
    If I have skins from home grown tomatoes, I never feed those to the chickens, they’re too good! I dry them (FD or dehydrate), and make a spice powder with dried garlic, salt, pepper, oregano, paprika, chili, etc. I love to gift it to friends. Our favourite way to use it is to season steaks, grilled chicken, and roasted root veg & best of all, potatoes. Coat the veg in EV olive oil, add the spice mix, roast in oven till crispy. Absolutely delicious! I have friends asking for more as they’ve run out! You can give that as a home grown & made Christmas gift .

      Do u have a recipe for your tomato powder seasoning? I just dehydrated my tomato skins and I’m going to be doing lots more.

      @@sunnysideup57 especially if they’re home grown and organic too, they’re too good to waste, in my opinion! Glad you use them too! I just dry the tomato skins I have; and add in a good about of dried garlic that I also grow and dry, then my herbs.. think of anything that will match, like oregano, thyme, dried parsley.. then I buy my salt (good quality one) and pepper as I don’t grow these, and paprika if I don’t grow enough, I use the bought one. Basically add little amounts and mix, taste, see if you like it, add more. I don’t think you can go wrong with any amounts only the salt. Add that in small portions till it’s got some saltiness but not too much. It just makes a great all round seasoning. Sprinkled on avocado and toast, in steamed green beans with butter.. so many applications

    I like that those frozen veg are now shelf stable. If the power goes out it is one less thing to thaw in the freezer, and you have soup that can cook on the wood stove! Great projects today!

    Jessica, freezing tomatoes for some time now, it’s iso easy. Pull out one bag at a time and make them however I what them. I live alone so I can do this.

    Glad that you brought up how you recycle your water. We live in the suburbs and have set up an outdoor sink. We use all of the filtered process water on the plants. Everything seems to grow better when the chlorine is removed via the filter.

    My aunt used to can her tomatoes and since it was just her and my uncle she made them a gift to family. You can definitely tell the difference in soups, chili and spaghetti sauce when you are able to use fresh versus store bought. That chili spaghetti made me hungry! I know that is definitely an Ohio speciality!

    I will be doing your veg soup canning - I can fresh corn off the cob and cut up green beans but the rest I will get frozen - just don't have much fresh from the garden this year. So helpful as I have veg soup all year long for lunches. I can also can it with chicken broth that I make all year from bought chicken carcasses. Always learning from you - thank you so much. 77 yo and loving to can! I really appreciate you mentioning that modern tomatoes are hi-bred and NOT the same as years ago so we MUST follow canning rules.

    I like canning versatile “ingredient” items too, like my roasted garlic, basil marinara sauce to use as a soup base, or use my immersion blender for a smoother sauce to go on anything. Except soups, I love being able to grab a jar of soup, middle of the winter, just heat & serve.

    I canned 32 pints of green tomatoes for frying today. I'm very happy to have it. Tomorrow I gotta start on the red tomatoes. I can't wait. This will be my first time canning tomatoes for salsa and pizza sauce and just regular tomato sauce. Thank you for showing us all this.

    I just processed my first batch of frozen tomatoes!! And what an easy stress free way to take care of them! I had always tried to do something with them quick so they didn’t spoil and never thought to freeze them. It was so easy to get the skins off and then cook to make sauce and juice. And… I could do it when I wasn’t pressed for time.

    I just canned my own tomato sauce last night. I roasted my cherry tomatoes with fresh onion and garlic and put in some of my dehydrated basil and it turned out so delicious!! Only yielded 2 pints, but I’ll take it! I also made Muscadine jelly for the first time - so so yummy!!!

    I love the chili sauce as well as the juice and the soup base. I only have water bath canners and a steam canner so sadly I won't be able to do the chili sauce. Loved the video Jessica. Thankyou.

    I have a theory that the heirloom tomato acidity is an urban legend. I've been testing the pH of my tomato sauce (plain) for about 5 years now and I only grow heirlooms, my sauce always has a hefty amount of yellow and orange tomatoes, some years it's a really pretty color! But the pH is always safe!! So I've stopped adding lemon juice and just test it first, so far I have yet to be proven wrong!!

      I just started doing this too and found it to be true with heirloom tomatoes. I don't want to add lemon juice to my sauces if they're already acidic enough bc later I would need to fix the taste to our liking.

    I just let my tomatoes thaw. The skins slip right off. I core them before freezing

      Same, I wash, core and quarter; but good to know we can just toss them into the freezer right out of the garden.

      Same. One does have to plan ahead as it does take a while for them to defrost. I freeze mine in grocery bags. Defrosting also allows a lot of the water to drain off. So many ways to do tomatoes. The chili base looks fantastic.

      We call it “core and score” you cut a small x in the bottom and skins fall off while defrosting. Love the idea of canning the juice

    It is great that you err on the side of less spicy and less salt. Even if one does not have small children, if there are extended fam members or other guests, they may not be able to take the spice or salt. It is always easier to add spices/salt than try to dilute them

    I think meals in a jar are something I need to prioritize to get us to stop eating out so much. I've been good at cooking most of our dinners but there are days I just need something I can dump in a pot and heat up

    Good Morning Jessica! As Always Much Love from Okc❤ I'm still on bedrest but I've been doing small projects(bought and currently dehydrating a bunch to vacuum seal) got the ingredients for 3-4 Ball recipes and started a peach vinegar and blueberry and hopefully this will I'll start a pineapple vinegar 🙏🏽 I have a family of 3 and Our Baby Turn 21 recently. I just love it as a hobby and food preservation and safety ❤️

    Really like the idea of different soup bases. We are living in a home with basically 9 adult appetites and it really has helped me out and stetches what. I have already learned watching someone different. Hadn't even thought of the chili starter to use for chili mac I always just used the leftovers to make iit. Always enjoy watching.

    Hi Jessica and Blessed Sunday to you all! I just canned tomato basil vegetable soup yesterday. I’m going to try your onion base soup next. I’ve been adding citric acid to all my canned tomato products whether I pressure can or water bath. I tend not to add salt to things so it seems to kick the flavor up and the color seems to stay pretty in addition to lowering the ph. Guess it’s a “good” force of habit!

    we just freeze dried a big batch of chili and wow! It worked and reconstitutes great. I'm super excited. I usually can my chili , but thought I'd give it a whirl. It was fantastic. Love your videos .

    Yes I was thinking about all that water, but WOW how amazing the water goes through and can once again be reused, repurpose I wish I could do that well water is the best fresh from nature ❤❤❤

    Good job! I am just starting to do tomatoes - I am doing quite a bit of sausey juice for chili's, beans etc. But will also do spaghetti sauce and whole tomatoes as well.

    As soon as I get enough Tom's large and small different types, I chop them and liquidise and then freeze, each batch is frozen then when season ends I use all of these as a base for anything. Canning all in the same day. Always interesting to see how others prepare their food, thanks for the video

    Happy Sunday Jessica. Canning tomatoes is one of my favorite things to can. Besides making jams. My garden did not do well this year due to the heat, so I had to buy most of my tomatoes. 😔. When we put chili over spaghetti, its called chili mac, yum yum. We used to get a version of it at a restaurant called Stake N Shake. They have the best chili. Unfortunately we dont have that restaurant here in Az. 😔 bummer. So, we have to make our own version. I also can my own spaghetti sauce base, then just add the meat when we use it. So with the tomato sauce, cant you water bath them? Have a great weekend. God bless 🙏🏻🌻
