I like that you mentioned that dal is a source of carbs rather than protein. Similarly, paneer is also a source of fat rather than protein. For every 100gm of paneer that you eat, you get more fat than protein. That's not to say fats are bad, just that vegetarians overeat paneer thinking it's protein without balancing out the fat by reducing their carbs. Your mom is doing it well, kudos to her!
The trick is to not eat sugar and carbs as breakfast and minimize the intake of unhealthy oil and carbs throughout the day if you don’t burn calories with exercise or other activities. It’s hard to diet with traditional Indian food which is why we get easily obese.

Yes you can prepare at home but some items like almonds peanuts flaxseeds etc if you grind them more oil will separate so be careful while grinding ❤
