The difficulty comes from the fact that Western chefs and gourmands don't actively seek this taste out, although they appreciate dishes where it's present. If you (anyone reading this comment, really) don't know what umami tastes like, drop a pinch of MSG on your tongue and you'll find out.

The best way I have found to explain Umami is MSG, it's that subtle combination of salty and sweet present in mushrooms and meat, that flavor you get from a proper maillard reaction. Have to admit, this is the first podcast I have really been following and truly enjoying!! My absolute favorite burger was a little cafe in pilot point Texas called the magnolia cafe. It was a blackened blue cheese crumble bacon burger with sweet potato tots. They had a sauce called crazy sauce, a kind of curry ketchup affair.
Savoury is good translation of umami. It is a flavour that usually accompanies the protein rich food. Umami is chemicaly not that simple as only Monosodium Glutamate, MSG is a major component but not the only one, there is a great variety of umami flavours by additional substances. As salty, sweet and umami receptors of your tongue overlap to some extent, good way to try is to mix a little bit of Salt&Sugar and little bit of Salt&Sugar&MSG and compare the two. MSG being both salty and sweet is not the main trick. We have unique taste buds for umami so it is a taste (flavour). European cooking did not use the word but various sauces and stocks are mainly about the richness of this. Cheeses, fishes, salted meats etc.

Idea for a french onion soup burger revision. Make french onion soup but stop after the add stock step. Mix the solids into burger patties and the liquids turned into a burger sauce. Butter fried thick bread with cheese melted. on both sides.
My favorite burger is the Wisconsin butter burger. You freeze the butter then shred it, and mix it into the ground beef. You also toast the buns in butter. You might die, but you’ll be happy! Guga has a video on it. You’re burger sounds delicious! 🍔

I just use chilled butter as if I were making a pie crust and flatten the butter out then mix into the seasoned meat. The real butter burger is like a Juicy Lucy but instead of sealing in cheese between two patties you seal in some butter. You can play with the flavor by using compound butters.

I'm 22 years older than my youngest sister... And I'm the second child. But at least we are reasonably spaced. My wife's family on the other hand... Her parents had 2 kids, then waited 12 years and then had 8 more... More of a 30 year age gap between oldest and youngest there.
Taste of umami is just area in tongue reacting to msg molecules that are present in tomatoes, mushrooms and meats. Kinda like nature's way to tell nutritious food. I got strong allergy to msg and have very specific diet. No more satisfying and filling umami flavors for me.
I remember the emergency alert thing. I had 2 phones (one work one personal) and neither got it. My entire family got it, but i did not. It was really strange
I know how to make the original brown sweet and sour sauce. Not the red stuff you get from the Chinese restaurants. My mother in law taught me. Hands down the best sauce ever. Knowing that base sauce helps with lots of other Asian/American dishes.

Someone may have posted this already, but as far as Amish owning phones - in Pennsylvania (Lancaster, etc.), Amish folks are allowed to have phones for "emergencies", but they must be a certain distance from their home, so you would see little huts at the side of the road that had a telephone. Now that landlines are going away, they are transitioning to cell phones, but they must still store them and charge them in the little huts. Lots of weird hypocrisies with the Amish. They can use tractors and stuff, but they can't "own" them, and they must have metal wheels so that rubber does not contaminate their crops. (sorry to digress)
