    2 dried coconut
    4 cups water
    2 1/2 cups brown sugar
    1/2 cup grated ginger
    1 tbsp ginger (powder)

    Thank you! My grandmother was Bajan and my Dad used to make a coconut candy using STRIPS of coconut rather than diced chunks. I can’t find a recipe for candy exactly like his, so it seems that his recipe died with him over 35 years ago, and I’ve been heartbroken about that because I always loved when he made it. Your recipe is the one to come closest to the consistency of my Daddy’s candy, except I think he used white sugar. I’m going to start with your recipe and then experiment from there each time I make it… remembering my Daddy with love in each bite! Thank you so much!💐💐💐

      Hi @SistahRev! The Jamaican drop recipe is similar to the classic Filipino dessert. The abundance of coconut trees in the Phils make it easier for us to cook that in many ways. Here are few of the you tube channel you may want to see for different ways to cook that dessert from coconut meat. The local name of that recipe is Bukayo. Hope it helps.     I grew up eating this it was one of my favorite after school snack. OMGOSH this video brought back memories from when my mom used to make them. I got to Big Up your Dad for not throwing away the Coconut Watah this time lol

    Trying this now but I’m going grind up a little Himalayas salt with a little Pimento and after I drop the drops I’m going to lightly sprinkle from a height. Not too much though

    If your using foil paper how is it done

      Place the foil paper onto a baking tray(lightly grease it) and add the drops. They will harden and set just the same.
