Are they comparing total revenue/cash taken at the end of the show or profit???? I'm assuming cash taken but I'm sure the Vegetarian truck would have spent WAY less on ingredients so doesn't seem fair?

Good point but I assume they are basing that on how much customers are actually “willing” to spend. The winners are more likely to have customers/success. Customers don’t care about food cost and revenue.
