Hi Felicia! So there is actually two answers to this. If you are using propane, you’d only have to use the wood chips, as the propane would be the source of your heat to burn the chips to produce smoke. On the flipside, if you’re using anything other than propane, most likely charcoal, then you would need to place the wood chips on top of the heated charcoals to produce that same smoke.

it’s easier to keep a clean fire with dry wood. there’s no need to soak chips or chunks.
