    i've used this recipe 5 times and it is always a hit at every party i go to!i absolutely love it!
    i do use white vinegar instead of cream of tartar and double the recipe because i find that it is too thin otherwise! also i always grease the pan otgherwise it is hard to remove the parchment paper from the cake!

      It's say pandan juice but I don't have it but I do have pandan paste can I replace it

    Hi, your instructions for this lovely Pandan Swiss roll is the best on the web.
    Please may I know on which shelf of the oven do I place the baking tray. Lowest bottom shelf or middle shelf?
    Is the baking tray to be placed immediately above the tray of water?
    Am I right to say that the baking tray is placed on the rack and NOT in the tray of water?
    I await your instructions, as I am dying to try your recipe.

      My oven is 2 in 1 microwave cum convection oven, there is only top and bottom, I usually put at bottom shelf. If your oven has top and bottom heat, then you may put in middle shelf. Yes, put a wire rack on the tray of water, then put baking tray on top of the wire rack, you may refer to the video, it is demonstrated as the beginning of the video.

      Dairy whipping cream will melt at room temperature.

      My oven is microwave + convection oven, always with fan on. There is no top/bottom heat for my oven. For normal oven you may try to put it at middle rack.

      You may replace with same amount of lemon juice. Make 2 cuts will make the rolling easier.

    Hi, can I opt out the the pandan flavour? Where I am, it’s difficult to get the fresh leaves or extract. Also, if I dont have milk powder, can I use milk instead? If so, how many ml? Thank you.

      Yes, you can blend milk with pandan leaves, then extract 45 g of pandan milk.

      For the portion in the recipe, the cake will be thick if using 10" x 10" tray, it tends to crack when rolling up if too thick. You may reduce the portion to 2 eggs if using 10" x 10" tray.

      Baking with a tray of water will keep the cake moist so that it won't crack easily while rolling. You may try first without water.

      Try to follow the way shown in the video, bake with a tray of water will yield a moister cake which less tends to crack. Use the size of baking pan suggested, don't use smaller pan, if the cake is too thick, it will crack too when rolled.

      26 cm square pan is too small, use only 75% of all ingredients. If the cake is too thick it will crack when rolled up.
      I use sweetened non-dairy topping cream, didn't add sugar.

      Are you using small pan to bake? If the cake is too thick it will tend to break when rolled up.

      Haven't use pandan extract, just add little by little to water until the correct colour you want.

      Thicker cake will tend to crack when rolling up.

      I haven't use pandan paste before. You may add pandan paste to water little by little until the colour is deep enough.

      Yes. I'm not sure how much to use as I haven't used pandan extract before, you may try using 1/2 tsp and see if it is thick enough.

      I use non-dairy topping cream (usually used for decorating cake) which is already sweetened. If you use dairy-whipping cream which is unsweetened, then you may add some icing sugar to taste.

      Non-dairy whipping cream is a.k.a. non-dairy topping cream, which is usually used for cake decoration.

      You may use dairy whipped cream but it will melt easily at room temperature, so you need to work fast when rolling up the cake and keep refrigerated.

    Thanks a lot for the recipe. I tried it and it was delicious but my cake wasnt pretty as it was stuck on baking paper while rolling. I already make sure it was cooled but still :'(. Any tips on how to avoid it next time pls?

      The cake must be baked until the top is golden brown so that the surface won’t be sticky when cooled. The heat for different oven is different, the suggested time is only for reference, adjust the baking time base on your oven if necessary.

    When I was rolling the sponge up, some of the skin got stuck to the greaseproof paper so the appearance of the swiss roll was spoiled. I did cool it down and also the top was brown. Any tips on how to avoid that?

      Hi… It’s possible that the top is not fully dry/cooked. If that’s the case where the skin got stuck, u need to leave it in the oven slightly longer. Not too long maybe just 1-2 mins as all ovens are different so you need to do trial & error on how long to bake it. Maybe next time try baking it a minute or two longer.
