    In this part of the video I have never seen this video before but I am a graduate of the Cia and I got in 1984,and a couple of years ago I went with my daughter's to the CIA,because they wanted to see the campus and what was the ESCOFFIER dining room was renamed BOUQUSCE room so it's an honor to listen to this interview

If you can track down a recording of Monsieur Bocuse's "Bocuse a la carte" you will never have to take another cooking class as long as you live. 39 episodes packed with sage advice about culinary method and technique, wine choices, and Paul's philosophy about food preparation and presentation. Believe me, you will keep coming back to it year after year as I do.

    they asked my question about who he would pick for chef of the century, other than himself! 2:33 that was so awesome! what a great event to see paul bocuse in person!

    I used to live in Lyon for a while. Paul Bocuse is a local hero for putting Lyonnaise cuisine on the global map. Paul Bocuse's restaurant in Lyon is world class and an experience of a lifetime. I learnt to love French food, wine and cheese in Lyon. BTW Iam Asian.

    absolutely true. don't forget that butter and wine were the main ingredients in Ancient Greek cuisine. respect Paul Bocuse.but we don't have to forget the roots of it :-)
    even if I live in Luxembourg not that far from Lyon :-)

    The REAL Chef of the Century is Joel Robuchon folks. Do not be fooled.

      Robuchon is an amazing chef but he is not even close to Bocuse or Gagnaire in term of human qualities and the amount of Chefs he positively mentored.

      hahaha joel robuchon himself says bocuse is the god of cuisine and the father of french cuisine. bocuse made him and alain ducasse his heirs

      alain ducasse is not really a chef anymore and hasnt been for a while. Although he is a master at picking the best produce form all around the world and is actually certainly better than any other chef in that regards
