Here I am again within the walls of my home, after a long holiday at my parents' house in Sicily.
And it is precisely from my land and from my mother's hands that this last video comes! In fact, I give you the family recipe of my mother's beccafico sardines, made by her!
How good are sardines made this way and above all easy to do!
You can also add a finely chopped clove of garlic and a handful of toasted pine nuts and soaked raisins to the filling, if you like.
You can also flour them with the common 00 flour, but with durum wheat semolina flour your sardines will still be crunchy and delicious!

Ingredients :
1kg of fresh sardines
2 eggs
150g of breadcrumbs (better if made from stale bread minced in a mixer)
3 tablespoons of Parmesan or 2 of grated pecorino
1 tablespoon of olive oil
1 sprig of fresh parsley
sunflower oil for frying
salt and black pepper
